My Simple Sicilian Slow Cooker Chicken Soup

As a busy working mom, finding time to cook a hearty and delicious meal can be a challenge. That's why I've fallen head over heels for slow cooker recipes. They're a lifesaver! This Sicilian Chicken Soup is one of my absolute favorites. It's bursting with flavor, incredibly comforting, and requires minimal hands-on time. The best part? It smells amazing while it simmers all day, filling my home with the promise of a wonderful dinner.

This recipe is incredibly versatile. I often adjust the vegetables based on what's fresh and available at the market. Sometimes I add zucchini, spinach, or even some chopped bell peppers for extra color and nutrition. The beauty of slow cooker recipes is their adaptability. Feel free to experiment! The robust chicken broth base provides a strong foundation of flavor that complements all sorts of additions.

The secret to this soup's incredible richness lies in the long, slow cooking process. The chicken becomes incredibly tender, practically falling apart. The vegetables soften beautifully, releasing their natural sweetness. The flavors meld together creating a harmonious symphony of taste that's simply unforgettable. And because I use a slow cooker, I don't need to worry about constantly tending to it.

This soup is perfect for a cozy weeknight dinner or a special occasion. I often serve it with a crusty bread for dipping, and it's always a crowd-pleaser. The combination of tender chicken, perfectly cooked vegetables, and a rich, flavorful broth is hard to resist. It’s the kind of soup that warms you from the inside out, perfect for those chilly evenings. It's also a great way to use up leftover cooked chicken if you have some on hand.

I’ve found that using a good quality chicken broth base makes all the difference in the taste of this soup. Don't be tempted to substitute with bouillon cubes, as the flavor isn't quite the same. A quality broth base adds a depth of flavor that elevates this simple recipe to something extraordinary. The addition of fresh herbs, like parsley, adds a bright and fresh element that balances the richness of the broth.

One of my favorite things about this recipe is its ease of preparation. It only takes a few minutes to throw all the ingredients into the slow cooker in the morning, and then you can completely forget about it until dinner time. This makes it the perfect recipe for busy weeknights, or for those days when you simply don’t feel like spending hours in the kitchen. The result is a truly satisfying and delicious meal that everyone will love.

I usually double this recipe and freeze half for another night, saving time on a busy week. This soup reheats beautifully, retaining its flavor and texture. So whether it’s a busy weekday or a relaxing weekend, this Sicilian Slow Cooker Chicken Soup is a guaranteed winner that will become a staple in your family’s culinary repertoire.

This slow cooker recipe is the epitome of effortless elegance. It manages to be both incredibly simple to make and yet utterly delicious. It’s a true testament to the power of slow cooking to transform humble ingredients into something truly special. I hope you enjoy this recipe as much as I do. It’s become a family favorite, and I’m confident it will become one of yours too.

Ingredients Used:

  • Chicken Breast
  • Water
  • Chicken Broth Base
  • Onion
  • Celery
  • Carrots
  • Potatoes
  • Diced Tomatoes
  • Garlic
  • Parsley
  • Salt and Pepper
  • Noodles
  • Asiago or Parmesan Cheese

Step-by-step

    • In slow cooker add chicken breast, water, chicken base, onion, celery, carrots, and potatoes, diced tomatoes with their juices, garlic, parsley, 2 teaspoons salt and pepper.
    • Cook on high for 6 hours, remove chicken breast and shred, place back in soup and bake another 2 hours.
    • At the end of 8 hours, use a potato masher, mash the soup around a few times, letting some of the potatoes get a little smashed. I don’t try too hard on this, I just mash 2-3 times and call it good.
    • Add noodles to the slow cooker and season with additional salt and pepper if needed.
    • Serve with ½ cup of sharp cheese on top, we like Asiago and parmesan both. We actually like to serve the soup with the noodles on the side, letting each person add the amount of noodles they want.
