End of Summer Salad: A Simple Delight

As the summer days start to wane and the air turns crisper, I find myself craving lighter, fresher meals. This End of Summer Salad perfectly captures that feeling. It’s a celebration of the last of the garden’s bounty, a vibrant mix of textures and flavors that is both incredibly simple to make and incredibly satisfying to eat. I’ve always loved salads; they’re the perfect canvas for creativity in the kitchen. And this particular salad is my ode to the late summer sun and those long, lazy afternoons spent outdoors.

The beauty of this recipe lies in its flexibility. You can easily adapt it to whatever vegetables you have on hand. A surplus of zucchini? Throw it in! Have some leftover grilled chicken? That works perfectly too! The base remains the same – a delightful mix of crisp cucumber, juicy tomato, and sweet onion – but the additions are endless. I particularly love the addition of avocado; its creamy texture provides a lovely contrast to the crunch of the other vegetables. And the Applegate Farms chicken apple sausage adds a savory depth that elevates the salad from simple to truly memorable. The dressing, a simple lemon-olive oil vinaigrette, is light and bright, allowing the natural flavors of the ingredients to shine through. It’s the perfect balance of tangy and rich, without being heavy or overpowering.

Beyond the Recipe: A Celebration of Simplicity

This salad isn't just about the ingredients; it's about the experience. It's about the simple pleasure of chopping fresh vegetables, the satisfying scent of herbs, and the feeling of creating something delicious and healthy from scratch. For me, cooking is a form of meditation. It’s a way to slow down, to connect with my ingredients, and to appreciate the simple act of nourishing myself and my loved ones. This salad reflects that ethos perfectly. It’s a recipe that embraces imperfection; it doesn’t require precise measurements or complicated techniques. Just fresh, good-quality ingredients and a willingness to experiment.

Adapting the Recipe to Your Life

One of the things I love most about this salad is its versatility. It's perfect for a quick weeknight meal, a casual lunch with friends, or even a light and refreshing side dish for a summer barbecue. If you're short on time, you can easily use pre-chopped vegetables to save time. And if you’re not a fan of sausage, feel free to substitute it with grilled chicken, chickpeas, or even just extra avocado. The possibilities are truly endless. The key is to have fun with it and create a salad that reflects your personal taste and preferences.

More Than Just a Meal: A Mindset

This End of Summer Salad is more than just a recipe; it’s a reminder to appreciate the simple things in life. It's a testament to the power of fresh, seasonal ingredients and the joy of creating something delicious and healthy with your own two hands. In a world that often feels overwhelming and rushed, this salad offers a moment of peace, a chance to connect with nature, and a delicious reward for your efforts. So, gather your ingredients, put on some music, and enjoy the process of creating this simple yet satisfying salad. It's a small act of self-care, a moment of mindful cooking, and a delicious way to savor the last days of summer.

Variations and Additions:

  • Add some crunch: Toasted sunflower seeds, slivered almonds, or crumbled bacon would add a delightful textural contrast.
  • Boost the protein: Grilled chicken, chickpeas, or white beans would increase the protein content and make it a more substantial meal.
  • Spice it up: A pinch of red pepper flakes or a dash of your favorite hot sauce could add a kick.
  • Get creative with herbs: Experiment with different herbs like parsley, dill, or mint.
  • Add some cheese: Feta, goat cheese, or crumbled blue cheese would add a creamy, tangy element.

No matter how you choose to prepare it, this End of Summer Salad is sure to become a favorite. Enjoy!

Step-by-step

    • Wash and chop all your vegetables and add them into a mixing bowl along with your avocado, and sausage.
    • I used ready to go sausages - but if you need to cook yours up fresh I'd chop or crumble it up, let it start to cook and then chop up your veggies while it's cooking. They should be done at the same time! And if they're not you can finish making the salad and then add the sausage at the very end!
    • Add in ½ a lemon's worth of juice and a big drizzle of good olive oil. I generally go for a first cold press, extra virgin olive oil!
    • Add in your basil, garlic powder, salt + pepper.
    • Mix it up really well.
    • Taste test and add the other half of the lemon's juice if you need to!
