Chicken Cream Cheese Chili: A Weeknight Winner

Life as a working mom is a whirlwind of activity. Between juggling deadlines at the office, school pick-ups, and making sure everyone gets a healthy meal on the table, finding time for anything else feels like a luxury. That’s why I’m always on the lookout for quick, easy, and delicious recipes that don’t compromise on flavor. And this Chicken Cream Cheese Chili is a true lifesaver!

I stumbled upon this recipe a few months ago while searching for something different to spice up our family dinners. Initially, I was a little skeptical about the cream cheese – chili? It sounded a bit unusual. But let me tell you, the combination is pure magic! The cream cheese adds a creamy richness that perfectly balances the spiciness of the chili powder and cumin, creating a depth of flavor that’s both comforting and exciting. It’s the kind of recipe that makes everyone happy, even the pickiest eaters in the family (yes, I’m looking at you, 10-year-old!).

One of the best things about this recipe is its versatility. I often adjust it depending on what I have on hand. Sometimes I add a can of diced tomatoes and green chilies, sometimes not. I've also experimented with different types of beans – kidney beans, pinto beans, even black-eyed peas all work wonderfully. And if I'm feeling extra adventurous, I throw in some chopped bell peppers or jalapenos for an extra kick.

The slow cooker is my absolute best friend when it comes to weeknight meals. This recipe couldn’t be easier! Simply toss everything into the slow cooker in the morning, and by dinnertime, you have a hearty, flavorful meal ready to go. The slow cooking process allows the flavors to meld beautifully, creating a depth that you just can't achieve with a quick stovetop method. It’s perfect for those busy evenings when you want a delicious home-cooked meal without the fuss.

The beauty of this chili lies not just in its ease of preparation, but in its adaptability. It’s a blank canvas for your culinary creativity. Feel free to experiment with different spices, beans, and additions to make it your own. Add some shredded cheese, a dollop of sour cream, or even a sprinkle of fresh cilantro for extra flair. Serve it with crusty bread, tortilla chips, or even a simple side salad – the possibilities are endless.

But honestly, my favorite way to enjoy this chili is over a baked potato, topped with a generous amount of cheese and sour cream. The creamy texture of the potato perfectly complements the richness of the chili, creating a truly satisfying and comforting meal. It's the perfect antidote to a long, stressful day. It's a meal that nourishes the body and soul, reminding me that even in the midst of chaos, there's always time for a simple pleasure – a delicious, comforting, and effortlessly prepared meal.

This Chicken Cream Cheese Chili is more than just a recipe; it's a testament to the power of simplicity and deliciousness in the midst of a busy life. It’s a meal that brings my family together, offering warmth, comfort, and a delicious taste of home, even on the busiest of weeknights. It's a reminder that even when life feels overwhelming, taking a moment to nourish ourselves and our loved ones with something simple yet flavorful makes all the difference.

Serving Suggestions:

  • Pair with white rice for a heartier dish.
  • Top with fresh cilantro for a pop of freshness.
  • Add a dollop of plain yogurt or Greek yogurt for a tangy twist.

So, the next time you're feeling overwhelmed by your to-do list, remember this easy and delicious recipe. It's the perfect solution for a weeknight dinner that's both satisfying and stress-free. You won't be disappointed!

Step-by-step

    • Place 2 chicken breasts in the bottom of the crock pot.
    • Drain and rinse (rinse until water runs clear) black and white beans; then add them to the pot.
    • Add finely chopped medium onion, undrained can of corn, undrained can of diced tomatoes with green chilies.
    • Top with 1 Tbsp chili powder, 1 tsp cumin, 1 package ranch dressing mix, ½ bunch of chopped cilantro, ½-1 cup chicken broth (depending on how thick you want it; I used 1 cup) and finally place your 8 oz package of cream cheese on top.
    • Cover and cook on low for 6 hours.
    • After it's been cooking 5 hours, break up the cream cheese into the rest of the mix. Cover and continue cooking the last hour (if you forget this step, it won't hurt anything to mix it at the end).
    • After the 6 hours, remove the chicken breasts into a medium bowl and shred with two forks. Chicken should be fall-apart tender.
    • Place the chicken back into the slow cooker and stir to combine.
    • Serve over baked potatoes topped with cheese and sour cream. It's also great with tortilla chips or white rice.
