My Cozy Kitchen: Easy Ham and Corn Chowder

As a busy mom, I'm always on the lookout for recipes that are both delicious and easy to make. This Ham and Corn Chowder fits the bill perfectly! It's hearty, comforting, and surprisingly simple to whip up, whether you're using the stovetop or a slow cooker. The creamy texture, combined with the sweetness of the corn and the savory ham, creates a flavor profile that's hard to resist. It's the kind of soup that warms you from the inside out on a chilly evening, and it's become a staple in our family's weekly meal rotation.

What I love most about this recipe is its versatility. You can easily adjust the ingredients to your liking. Want a spicier kick? Add a pinch of red pepper flakes. Prefer a richer flavor? Use heavy cream instead of half-and-half. Feel free to experiment with different types of ham – I've even used leftover holiday ham with fantastic results! The beauty of this chowder lies in its adaptability. It's a blank canvas for your culinary creativity. It’s also a fantastic way to use up leftover ham, turning a simple leftover into a delicious and satisfying meal. The leftovers are even better the next day!

The slow cooker method is my personal favorite, especially on busy weekdays. Just toss everything in the morning, and come home to a perfectly cooked, comforting bowl of deliciousness. It practically makes itself! But honestly, both the stovetop and slow cooker methods are equally simple and effective, allowing you to choose the method that best fits your schedule and preferences. This soup is a perfect example of how a simple recipe can bring joy and warmth to your family’s table. It's more than just a meal; it's a hug in a bowl.

Beyond its ease and deliciousness, this chowder is also incredibly budget-friendly. Using pantry staples and readily available ingredients keeps the cost down without compromising on flavor. The simple ingredients allow the natural flavors of the ham and corn to shine, proving that sometimes the best recipes are the simplest. I often find myself making a double batch, not only for immediate consumption but also to freeze portions for future meals. This allows me to enjoy this comforting soup throughout the week, making it a true time-saver. It's a testament to the fact that flavorful, heartwarming meals don't have to be complicated or expensive.

So, whether you're a seasoned cook or a kitchen novice, I highly recommend giving this Easy Ham and Corn Chowder a try. It's a recipe that's sure to become a new family favorite, just as it has for mine. I promise you, it’s a recipe you’ll return to again and again, enjoying its comforting warmth and satisfying taste every time. It's the perfect embodiment of simple cooking done right. The rich flavors and the ease of preparation make it a winner in my book, and it's a recipe I'm thrilled to share with you. Give it a try and let me know what you think!

Tips and Variations:

  • Spice it up: Add a pinch of red pepper flakes or a dash of your favorite hot sauce for a spicier kick.
  • Creamier texture: Use heavy cream instead of half-and-half for an even richer, creamier chowder.
  • Add vegetables: Feel free to add other vegetables like potatoes, carrots, or celery for extra flavor and nutrients.
  • Make it your own: Experiment with different types of ham, such as smoked ham or prosciutto, for a unique twist.
  • Leftover magic: This is the perfect recipe to use up leftover cooked ham, making it a budget-friendly and delicious meal.

Enjoy!

Step-by-step

    • Stove Top Method: (This first step is optional, but I like to saute my onions in the Olive Oil, just to sweeten the flavor of the onion. If you choose not to do it, then you won't need the Olive Oil and you can just add the onion to the soup mix)
    • In a large pot saute onions in Olive Oil till translucent.
    • Add the soups, corn, ham and salt and pepper to the pot.
    • Simmer for 20 minutes.
    • Add the half and half and heat through for 10 more minutes.
    • Slow Cooker Method: Same as above, but just throw all the ingredients excluding half and half into your crock pot and cook on low for 4 hours.
    • Add the half and half after four hours and heat through for 20 more minutes on low.
