    • Boil potatoes upto 4 whistles in a pressure cooker.
    • Once they cool down, peel their skin and chop them into cubes.
    • Use your hands to mash them. Keep them aside.
    • Take a saucepan or pan. Place it on low heat.
    • Add butter/ghee/olive oil.
    • Immediately add milk and cook for 2 mins.
    • Add black pepper powder.
    • Mix all spices into it (turmeric, salt, hing, red chili powder, coriander seed powder, fennel seed powder, chat masala).
    • Stir all nicely.
    • Lastly add salt and roasted cumin seed.
    • Pour this hot mixture on the mashed potatoes.
    • Stir in the chopped coriander leaves.
    • Combine all nicely until all is incorporated well. Don't over-mix this mixture else the potatoes would be gooey in texture.
