Indian Inspired Red Lentil Soup
A mildly spiced red lentil soup that is very easy to make yet gets great reviews and is very colorful and pretty. The use of whole spices gives it a unique aroma. I use non-chicken broth since the veggie broth has already a very distinct flavor. You can always use water or even chicken broth. If you don't have whole spices, use 1/2 tsp. of onion powder, coriander powder and cumin each. Must use red lentils (not brown or yellow)

That's why I've fallen head over heels for this Indian-inspired red lentil soup. It's vibrant, flavorful, and surprisingly simple to throw together even on the busiest of weekdays. Forget those complicated, time-consuming recipes; this one's a game-changer.

The beauty of this soup lies in its versatility. I often adapt it based on what's in my fridge. Sometimes, I add a splash of coconut milk for extra richness. Other times, I might throw in some spinach or kale in the last few minutes for added nutrients and a pop of green. The base recipe, however, is consistently fantastic. It's the perfect comfort food, warming you from the inside out, especially during chilly evenings. The slightly spicy kick adds a nice zing without overwhelming the delicate lentil flavor. And the best part? It’s packed with protein and fiber, so it keeps me feeling full and energized throughout the evening, even without resorting to unhealthy second helpings.

Why This Recipe Works:

  • Quick and Easy: It's perfect for busy weeknights. The entire cooking process takes about an hour, including prep time.
  • Flavorful and Aromatic: The blend of whole spices creates a unique and enticing aroma that fills your kitchen as it simmers. If you're short on time, you can easily substitute with powdered spices.
  • Healthy and Nutritious: Red lentils are packed with protein and fiber, making this soup a wholesome and satisfying meal. It's also naturally low in fat and cholesterol.
  • Versatile: Feel free to experiment with different vegetables, herbs, and spices to personalize your soup.
  • Budget-Friendly: The ingredients are readily available and relatively inexpensive.

Tips and Tricks for Success:

  • Rinse your lentils: This helps remove any debris and improves the overall texture of the soup.
  • Don't overcook the vegetables: Aim for slightly tender-crisp vegetables for optimal texture and flavor.
  • Adjust the spices to your liking: If you prefer a milder soup, reduce the amount of curry powder and chili flakes.
  • Serve with a dollop of yogurt or a squeeze of lemon juice: This adds a touch of creaminess and brightness.
  • Make it ahead: This soup tastes even better the next day! It's perfect for meal prepping.

Beyond its deliciousness and convenience, this recipe embodies my philosophy of mindful eating. It allows me to nourish my body and soul without sacrificing precious time or energy.
