Braised Cabbage and Bacon: A Simple Weeknight Delight

As a busy working mom, finding time to cook a healthy and delicious meal can feel like a Herculean task. Between juggling work deadlines, school pick-ups, and the endless to-do list, the thought of spending hours in the kitchen often feels overwhelming. But what if I told you there’s a simple, yet satisfying recipe that takes less than 30 minutes to prepare and leaves your family asking for more? Enter: Braised Cabbage and Bacon.

This recipe isn't just about speed and convenience; it's a testament to the power of simple ingredients transformed into something truly special. The sweetness of the apple perfectly complements the savory richness of the bacon, while the tender cabbage provides a delightful textural contrast. The aromatic rosemary and balsamic vinegar add layers of complexity, creating a flavor profile that’s both comforting and sophisticated. It's a meal that can be enjoyed on a busy weeknight or dressed up for a more casual weekend gathering.

Why I Love This Recipe:

This recipe is my go-to for several reasons. Firstly, it's incredibly versatile. I often adjust the ingredients based on what’s available in my fridge. Sometimes I add a handful of cranberries for a touch of tartness, or swap the yellow onion for a red one for a bolder flavor. Secondly, it’s incredibly forgiving. Don’t worry about precise measurements – a little more or less of this or that won’t ruin the dish. Lastly, and perhaps most importantly, it’s a crowd-pleaser. Everyone in my family, from my picky eater to my husband, enjoys this dish.

Beyond the Dinner Table:

The beauty of this dish extends beyond its deliciousness. It’s also incredibly budget-friendly. Cabbage is a relatively inexpensive vegetable, readily available in most grocery stores. And bacon, while a little more indulgent, adds a depth of flavor that’s hard to resist. This makes it a perfect recipe for those watching their budgets without sacrificing quality or taste.

Tips and Variations:

For a heartier meal, serve this braised cabbage and bacon over mashed potatoes or polenta. You could also add some cooked sausage or ground meat for extra protein. If you prefer a spicier kick, add a pinch of red pepper flakes. And don’t be afraid to experiment with different types of vinegar or herbs to create your own unique twist.

More Than Just a Meal:

Cooking, for me, is more than just preparing food; it's a form of self-care. It's a time to unwind, de-stress, and connect with my family. The simple act of chopping vegetables, sautéing bacon, and stirring the pot is a meditative process, allowing me to disconnect from the daily grind and focus on the task at hand. And the end result? A delicious, nourishing meal that brings my family together, making it all worthwhile.

This Braised Cabbage and Bacon recipe is a keeper for anyone who appreciates flavorful, easy-to-make meals that don't require hours of preparation. Give it a try, and you’ll discover why it’s become a staple in my kitchen.

Step-by-step

    • In a large sauce pan/pot, over medium heat, sauté bacon until brown and crispy.
    • Once crispy, remove with a slotted spoon and place onto a paper towel lined plate. Set aside.
    • Pour bacon grease through a strainer, into a glass jar and then pour back into the pot, 2 tablespoons.
    • Add your onion and cook on medium heat until translucent.
    • Then add your garlic and cook until fragrant, about 1 minute.
    • Next, add the apple chunks and cabbage, turn heat down to medium low, and stir and flip with tongs until everything is evenly coated in the bacon fat.
    • Allow to cook for a minute or two until cabbage starts to wilt.
    • Finally, add the salt, rosemary, balsamic vinegar, and broth/stock and cook, stirring occasionally until cabbage is cooked and tender and juices have evaporated, about 20 minutes.
    • Remove from pot and top and toss with the bacon.
    • Serve immediately.
