My Go-To Weeknight Meal: BBQ Chicken Calzones

As a busy working mom, finding time to cook a delicious and satisfying meal can feel like an impossible task. Between juggling work deadlines, school pick-ups, and homework help, the last thing I want to do is spend hours in the kitchen. That's why I've developed a love for quick, easy recipes that don't compromise on taste. And my absolute favorite? These BBQ Chicken Calzones!

The beauty of this recipe lies in its simplicity. I often grab a rotisserie chicken from the grocery store – a total time-saver! The pre-cooked chicken eliminates a significant step in the cooking process, allowing me to whip up this meal in a fraction of the time it would take to cook a chicken from scratch. Plus, the flavors are incredible. The sweet and smoky BBQ sauce perfectly complements the tender chicken and the melty mozzarella cheese. It's a flavor combination that my whole family loves, and it always leaves us feeling satisfied and energized.

I often adapt the recipe based on what I have on hand and my family's preferences. Sometimes, I add a sprinkle of red pepper flakes for a little kick, or I swap out the cilantro for some fresh parsley. The great thing is, the basic recipe is so versatile that you can easily customize it to fit your tastes. And if you're feeling adventurous, you can experiment with different BBQ sauces to find your perfect match. I personally love Sweet Baby Ray's, but there are so many amazing options out there.

The process itself is incredibly straightforward. The Rhodes dinner rolls are already pre-made and super convenient. I simply let them thaw, roll them out, add my filling, and bake them. The whole process usually takes me less than an hour from start to finish – that's a huge win in my book! They bake up beautifully, with a perfectly crispy crust and a warm, gooey center. It’s the ideal balance of comfort and convenience.

These BBQ Chicken Calzones are more than just a quick weeknight meal; they're a celebration of delicious, easy-to-make food. They’re perfect for a casual family dinner, a quick lunch, or even a fun appetizer for a get-together. And the best part is, there's very little cleanup afterward, leaving me with more time to spend with my family. This recipe is a true testament to the fact that healthy and delicious food doesn’t have to be complicated or time-consuming. It's about finding those smart shortcuts and embracing recipes that simplify your life while still delivering incredible flavor.

The aroma alone is enough to get my kids excited for dinner. I love watching their faces light up as they take their first bite, a testament to the magic that even simple recipes can create. It's the small moments, the simple joys, that often make life's greatest memories, and these BBQ Chicken Calzones have certainly become one of our family's favorites. They represent not just a meal, but a feeling of warmth, comfort, and togetherness. And that, to me, is priceless.

Beyond the Calzones: A Busy Mom’s Kitchen Philosophy

Cooking as a busy mom isn't just about nourishing my family; it's about creating moments. It's about finding joy in the process, even amidst the chaos. I've learned that efficient and delicious cooking isn’t about sacrificing quality for convenience, but about finding the perfect balance between the two. It's about using smart shortcuts to save time without compromising on flavor. This might mean using pre-cooked ingredients, opting for one-pan meals, or relying on simple recipes that require minimal prep work.

I don't strive for perfection in the kitchen. My goal isn’t to create Michelin-star meals every night. Instead, my aim is to provide wholesome, tasty meals that my family enjoys, without sacrificing the precious moments I could be spending with them. The kitchen is my happy place, a space where I can de-stress and connect with my loved ones through food. It's a place where memories are made, one delicious meal at a time. And these BBQ Chicken Calzones are just one of the many small victories in my ongoing culinary journey as a busy mom.

So, give this recipe a try. I’m confident you'll love it as much as my family does. It's the perfect blend of flavor, convenience, and family fun. And remember, even amidst the hustle and bustle of everyday life, there's always time for a little bit of deliciousness. Happy cooking!

Step-by-step

    • Place one frozen Rhodes dinner roll in each cup of a muffin tin.
    • Cover with a light towel and let thaw to room temperature and rise slightly.
    • Roll each roll out as far as it can go. You want them pretty thin.
    • Spread 2-3 tablespoons of your favorite BBQ sauce on 6 of the 12 rolled dough pieces, leaving about ⅛-1/2 inch border of dough on the outside.
    • Place as much cooked and shredded rotisserie chicken as desired (about ⅛ cup for each calzone).
    • Place 1-2 tablespoons of chopped red onion over the tops of the chicken.
    • Sprinkle 1-2 tablespoons of cilantro over the top of the onion.
    • Sprinkle with shredded mozzarella cheese (about ¼-1/4 cup per calzone).
    • Make sure none of the filling touches the ⅛-1/2 inch dough border you left around the outside of your 6 calzones.
    • Place a rolled out dough on top of each of your calzones and seal it up. Make sure it is sealed tightly so that none of the filling leaks out.
    • Place the 6 calzones on a greased baking sheet.
    • Bake at 350 for 20 minutes or until golden in color.
