My Low-Carb Bacon Cheeseburger Pizza Adventure

As a busy working mom, finding time to cook healthy and delicious meals is always a challenge. I crave comfort food, but the guilt of indulging in traditional, carb-heavy options often weighs on me. That’s where this amazing low-carb bacon cheeseburger pizza comes in! It’s the perfect solution for satisfying my cravings without sacrificing my health goals.

The recipe itself is surprisingly easy to follow. The "dough" comes together quickly in the microwave, requiring minimal effort. The most time-consuming part is actually cooking the bacon and preparing the beef mixture. But honestly, even that's a small price to pay for the incredible flavor and satisfaction I get from this pizza. One of my biggest surprises was how much I loved the almond flour crust. It's perfectly crispy and holds up beautifully, even with all the delicious toppings. And the flavor? Let's just say it's far from your average low-carb pizza alternative.

The combination of the savory ground beef, crispy bacon, tangy pickles, and melted cheese is pure heaven. It tastes exactly like a classic cheeseburger, only better because it’s in pizza form! The kids love it too, which is a huge win in my book. I’ve even found ways to sneak in extra vegetables without impacting the taste. Sometimes, I finely chop some mushrooms or peppers into the beef mixture, and nobody notices a thing!

This recipe has become a staple in our weekly meal plan. It’s versatile enough to adapt to different preferences – add jalapeños for a spicy kick, or try different types of cheese. The possibilities are endless! I usually make a double batch on the weekends, so we can enjoy it throughout the week. It reheats beautifully, retaining its crispy texture and amazing flavor.

Beyond just being a delicious and healthy meal, this pizza represents something more to me. It represents the balance I strive to achieve in my busy life. It’s a reminder that I can enjoy comfort food without sacrificing my well-being. It's quick, easy, and undeniably delicious – perfect for a weeknight meal when time is of the essence. And let’s be honest, sometimes, a little self-care is nothing more than indulging in a cheesy, meaty, low-carb pizza masterpiece.

So if you're looking for a healthier twist on a classic comfort food, I highly recommend giving this recipe a try. You won’t be disappointed! The deliciousness speaks for itself. It's a testament to the fact that healthy eating can be both satisfying and incredibly flavorful.

This recipe is a keeper. It's become a favorite in my family and a regular addition to my meal planning. I'm excited to try even more variations, and I’m constantly looking for new ways to incorporate this delicious and healthy pizza into my busy life.

Give it a shot, you won't regret it! Let me know in the comments how your Bacon Cheeseburger Pizza turns out!

Step-by-step

    • Preheat oven to 425°
    • In a large microwave-safe mixing bowl, combine mozzarella and cream cheese. Microwave for 1 minute. Remove from microwave and stir to combine. Return to microwave for 1 additional minute.
    • To the mixing bowl, add egg, almond flour, garlic powder, onion powder, Italian seasoning, sea salt, and black pepper. Mix until all ingredients are well incorporated. (It will be stiff and hard to mix)
    • Line a 12-inch pizza pan with parchment paper. Spread the "dough" into a thin but even layer, covering the pizza pan. If the dough gets too stringy and unworkable, simply put it back in the microwave for 1 minute to soften.
    • Bake on the middle rack for 10-12 minutes or until golden brown. Watch it to make sure that it does not bubble up. Use a toothpick to pop any bubbles, if necessary.
    • Mix low-carb pizza sauce with yellow mustard and set aside.
    • In a saute pan, over medium heat, combine ground beef, onion, and garlic. Saute until the ground beef is cooked through and the onions are soft. Drain any excess grease.
    • Spread pizza sauce evenly over the pizza crust.
    • Top with an even layer of cheese.
    • Pile on ground beef mixture.
    • Top with crumbled bacon and pickle slices.
    • Reduce oven to 350°
    • Bake for an additional 10 minutes.
