Step-by-step

    • Graham crust: In a food processor, blend graham crackers until crumbled.
    • Add butter and mix until butter is evenly crumbled.
    • In a 10" springform pan, press the graham cracker mixture on the bottom evenly. You can press crust slightly up the wall of the form to help cover the seal.
    • Place in refrigerator.
    • Preheat oven to 325F
    • Rinse food processor.
    • Place cream cheese in processor and blend, while gradually adding sugar. Blend until well-creamed. Scrape sides often as you are mixing it.
    • Add eggs, one at a time, and beat well after each egg.
    • Add lemon juice, vanilla, and sour cream and beat two more minutes until all ingredients are well blended.
    • Pour into the springform pan with the graham cracker crust. Hold snap on pan firmly and bang bottom of pan carefully on countertop to release the air in the mixture.
    • Place a pan of water in the oven to provide moisture to help prevent cheesecake from splitting on top.
    • OR Wrap tin foil around the bottom of the pan to make it watertight. Place springform pan into a roast pan. Set into oven. Add water to roast pan until 1/2 inch depth.
    • Bake for one hour in oven.
    • Without opening the door, shut off oven after one hour and leave cheesecake in oven overnight or until oven is cooled.
    • The next morning, remove from oven and refrigerate until ready to serve.
    • Variations: After mixing the batter, remove a couple of cups of batter and set aside. Pour the main batter onto the crust. Taking the batter set aside, add your choice of flavoring (1/4c Cocoa, strawberry/raspberry jam or preserves) mix in. Pour the flavored batter in any design you wish on top of main cheesecake. You can do a zig-zag design and then pull a butter knife through it to make a scalloped design.
    • After baking, you can add a choice of toppings such as caramel, chocolate, nuts, or fruit.
