    • Add the onion, bell pepper and garlic and continue cooking till onions soften just a bit…about 5 minutes.
    • Add the chicken stock, tomatoes and tomato sauce.
    • Add the dried herbs and stir to combine.
    • Season with salt and pepper to taste.
    • Bring to boil, reduce heat and simmer for about 30 minutes.
    • At this point you can add the diced, yellow squash.
    • Continue cooking for another 15-30 minutes or until desired consistency.
    • Add all the ingredients except the squash to the pot/Dutch oven, bring to a boil, reduce heat and simmer for one hour.
    • Add the squash during the last 15 minutes of cooking.
    • Serve over cooked spaghetti squash or cauliflower mash and a garden salad.
