Life as a working professional is a whirlwind. Between early mornings, demanding deadlines, and evening commitments, finding the time to prepare nutritious and satisfying meals can feel impossible. This Greek Chicken Salad Sandwich is my go-to recipe for those busy days, and I'm excited to share it with you.

The beauty of this recipe lies in its simplicity and versatility. It’s a perfect lunch option that can easily be packed for work or enjoyed on a quick lunch break. The vibrant flavors of fresh cucumbers, juicy tomatoes, salty feta, and tangy dressing combine to create a symphony of tastes that is both refreshing and filling. And the best part? The chicken can be cooked in advance, making meal prep a breeze. On Sunday, I typically cook a large batch of chicken breasts in my slow cooker – it’s so easy! This way, I have perfectly cooked chicken ready to go for several meals throughout the week. This saves me precious time during the week when I'm juggling my work schedule and other responsibilities.

Why I love this recipe:

  • Time-saving: The chicken can be pre-cooked, making assembly quick and easy.
  • Healthy and nutritious: Packed with protein, vegetables, and healthy fats.
  • Versatile: Can be served on various bread types, making it adaptable to different preferences.
  • Delicious and refreshing: The combination of flavors is incredibly satisfying and flavorful.
  • Perfect for meal prep: Prepare the salad ahead of time and store it in the refrigerator for a quick and easy lunch throughout the week. This works really well when paired with some whole grain bread or even crackers.

Beyond the Sandwich:

This Greek Chicken Salad isn't limited to sandwiches! Its versatility extends to various other options. Try it as a salad on a bed of greens, stuffed into pita bread for a Mediterranean twist, or served as a topping for baked potatoes for a hearty and satisfying dinner. The possibilities are endless!

This recipe is more than just a meal; it’s a symbol of efficiency and healthy living. In the fast-paced world we live in, it is important to find moments of simplicity and nourishment. This Greek Chicken Salad Sandwich recipe is my little contribution to your self-care routine; a delicious reminder that even amidst the chaos, you deserve to savor a wholesome and delicious meal.

A Tip for Success:

For the crispiest cucumbers and almonds, assemble your sandwiches right before eating. If you’re preparing ahead, store the chicken and veggies separately, and toss with the dressing just before serving.

I hope you enjoy this recipe as much as I do. Let me know in the comments how you like it! Happy cooking!

Step-by-step

    • To a mixing bowl add, diced chicken, cucumbers, tomatoes, feta cheese, red onion, Kalamata olives and sliced almonds.
    • Add dressing and toss to evenly coat.
    • Serve over bread, rolls, croissants, wraps, or in pita pockets.
    • For best results serve within 3 hours of preparing (for best crunchiness of cucumbers and almonds), store in refrigerator.
    • For the dressing: In a mixing bowl, whisk all of the dressing ingredients together to blend and season with salt and pepper to taste.
    • To cook the chicken I placed the raw chicken in the slow cooker, added 2 cups low-sodium chicken broth and a bit of salt and fresh ground black pepper then covered with lid and cooked on low heat until cooked through (4 - 6 hours depending on the size of the chicken breasts).
