Chicken Tetrazzini (Creamy Chicken or Turkey and Spaghetti)
My version of Chicken Tetrazzini, inspired by a combination of my grandmothers recipes and recipes I found on the internet. Chicken and spaghetti noodles bathed in a creamy sauce, and topped with cheddar cheese. It can be made with turkey or chicken, and is great paired with a salad & crusty bread.

My Comfort Food Classic: Chicken Tetrazzini

As a busy working mom, finding time to cook delicious and satisfying meals can be a real challenge. I need recipes that are both flavorful and efficient, and that's where my beloved Chicken Tetrazzini comes in. This isn't just any pasta dish; it's a comforting hug in a bowl, a taste of home that always hits the spot, regardless of how hectic my day has been. It's a recipe I've perfected over the years, tweaking and adjusting until it became the ultimate weeknight winner, perfect for busy schedules and family gatherings alike. The creamy, cheesy goodness perfectly complements the tender chicken and perfectly cooked spaghetti, creating a symphony of flavors that everyone in my family adores.

The inspiration for this recipe? A delightful blend of my grandmothers' time-honored techniques and a few internet discoveries. My grandmother, bless her soul, had a knack for creating the most comforting dishes, and her pasta recipes were legendary. However, the internet age has also opened up a world of culinary possibilities. I've combined the best of both worlds, creating a Chicken Tetrazzini that's both familiar and excitingly new. The result is a dish that’s deeply comforting yet surprisingly adaptable. Whether I’m using leftover roast chicken or opting for a quick-cooked turkey breast, this recipe always delivers. It's a blank canvas upon which I can freely unleash my culinary creativity, sometimes adding a pinch of extra spice or experimenting with different cheeses.

One of the best things about Chicken Tetrazzini is its versatility. It’s a perfect weeknight meal, but also easily scalable for larger gatherings or potlucks. The leftover portions are equally delicious the next day, making it a great choice for meal prepping. I often serve it with a simple green salad and a crusty loaf of bread for a complete and balanced meal. The creamy sauce is divine, coating every strand of perfectly cooked spaghetti, and the melted cheddar cheese adds a delightful sharpness that balances the richness. But don’t just take my word for it – give it a try and discover why this Chicken Tetrazzini has become a staple in my home, a testament to the power of simple ingredients brought together in perfect harmony. It’s more than just a recipe; it’s a taste of family, tradition, and the pure joy of a perfectly comforting meal.

This recipe is particularly valuable because of its convenience. You can prepare the dish ahead of time, freezing it for later use or refrigerating it for a quick meal. This flexibility is a game-changer for busy schedules and ensures there's always a delicious home-cooked meal on hand, even on the busiest of days. The simple ingredients are usually readily available, and the instructions are straightforward, making it ideal for beginner cooks. The dish itself is also remarkably forgiving – slight variations in ingredients or cooking times won't drastically affect the final product. This robustness makes it ideal for experimenting with different cheeses or adding your preferred vegetables.

The beauty of Chicken Tetrazzini lies in its ability to evoke a sense of nostalgia while still feeling fresh and new. It's a dish that transcends generations, reminding me of my grandmother's kitchen while simultaneously allowing me to personalize it to my tastes. I hope this recipe becomes as cherished in your home as it is in mine. It's more than just a meal; it's a connection to family, tradition, and the warmth of a home-cooked meal, all wrapped up in a creamy, cheesy, comforting hug.

This Chicken Tetrazzini isn't just food; it's a story. It's a story of family recipes, internet inspiration, and the evolution of a classic dish. It's a testament to the enduring power of comfort food in a world that demands efficiency and convenience. But it also reminds us that even amidst the chaos of everyday life, we can find time to savor delicious, homemade meals that nourish not just the body but also the soul.

Step-by-step

    • Cook, cool, and then shred chicken (white meat or combination white & dark).
    • Cook spaghetti in the same chicken broth until al dente and drain.
    • Combine cooked spaghetti with remaining ingredients except additional 1 cup sharp cheddar.
    • Place mixture in a casserole pan and top with remaining sharp cheddar.
    • Cover and freeze up to six months, cover and refrigerate up to two days, or bake immediately at 350F degrees for 45 minutes until bubbly. (If the cheese on top starts to get too cooked, cover with foil).
