Pistachio Pesto

Pistachio Pesto
Pistachio Pesto
This is a slight change from the original pesto. Lemon zest keeps it lively. Pistachios keep it a little cheaper than pine nuts. If you dont like cilantro use all basil. I myself love cilantro. Serve over hot pasta, dollop of pesto in vegetable or chicken soup, use pesto instead of your favorite spread on your sandwich, top a pizza with it and spread some on salmon or chicken then bake.

My Unexpected Pesto Adventure: A Twist on a Classic

As a busy working mom, finding time to cook can feel like navigating a minefield. Weeknights are often a whirlwind of homework, extracurricular activities, and the ever-present need to get dinner on the table. So, when I stumbled upon a recipe for pistachio pesto, I was intrigued. I'm always looking for ways to add a little flair to my otherwise mundane weeknight meals, and this recipe promised just that. The original pesto recipe called for pine nuts, but this one substituted pistachios, which I found to be a smart and budget-friendly alternative. The vibrant green color and the subtle nutty flavor of pistachios instantly captivated me. I had a mental image of the vibrant green color against the golden hue of pasta, and I was more than ready to give it a try. I always thought pesto was too much of a fuss to make from scratch, but this recipe proved me wrong. It was surprisingly quick and incredibly easy, even for a mom juggling a million things.

What truly surprised me about this pistachio pesto was its versatility. The recipe suggested serving it over pasta, which is certainly a classic and delicious option. However, my culinary curiosity pushed me to experiment further. I dolloped it into a simple vegetable soup, and the nutty flavor enhanced the vegetables beautifully. The unexpected creaminess was a welcome addition to my lunch, adding an extra depth that I would have never thought of otherwise. One afternoon, when I was short on time, I used it as a spread on a chicken sandwich, replacing my usual mayonnaise. The nutty, slightly tangy pesto added a completely new dimension to the sandwich. It’s safe to say, it’s now a staple in my repertoire. The pesto worked like a magic wand, transforming simple ingredients into something truly special. Even my picky teenagers were impressed, and that's saying something! The recipe also suggested topping pizza with pesto and spreading it on salmon or chicken before baking and wow, it was amazing. It was so good. A simple dish turned into an amazing healthy dinner!
