My recipe was inspired by the original post of Ham and Pineapple Pizza Wheels. I have made the vegetarian version of the recipes with basil, chipotle onions and thyme. From the book "The Essential Appetizers Cookbook" published by Anne Wilson of Whitecap Books of USA and Canada.

Herbed Pizza Wheels: A Vegetarian Twist on a Classic

Herbed Pizza Wheels: A Vegetarian Delight

As a busy working mom, finding time to cook delicious and satisfying meals can be a challenge. Weeknights often mean juggling work deadlines, school pick-ups, and homework help, leaving little energy for elaborate cooking projects. That's why I love recipes that are both quick and impressive, like these Herbed Pizza Wheels. Inspired by a ham and pineapple version I once saw, I've created a vegetarian adaptation that's packed with flavor and surprisingly easy to make.

The beauty of this recipe lies in its simplicity. The dough comes together quickly, requiring no fancy techniques or special ingredients. And the herbed topping—a vibrant mix of basil, thyme, chipotle onions, and green bell peppers—adds a depth of flavor that elevates this simple appetizer to something truly special. The chipotle onions bring a subtle smoky heat that perfectly complements the fresh herbs, creating a delightful balance of tastes. I often add a sprinkle of grated cheddar cheese for extra richness, but it's perfectly delicious without it too. I find that these little pizza wheels are incredibly versatile. They're perfect for a casual weeknight dinner, a fun appetizer for a party, or even a tasty lunchbox addition for my kids.

What I love most about this recipe is its adaptability. Feel free to experiment with different herbs and vegetables to create your own unique flavor combinations. Sun-dried tomatoes, roasted red peppers, or even spinach would be delicious additions. You can also adjust the spice level to your liking; if you prefer a milder flavor, simply omit the chipotle onions or use a milder chili pepper. The key is to have fun with it and let your creativity shine through. The simple act of creating something delicious and nourishing for my family always brings me a sense of accomplishment and joy, a small victory amidst the daily hustle. This recipe allows me to achieve that with minimal effort, and maximum flavour.

Tips for Success:

  • Use good quality ingredients: Fresh herbs make all the difference in this recipe. If you can, use homegrown herbs for the best flavor.
  • Don't overwork the dough: Overworking the dough can make it tough. Mix it just until it comes together.
  • Get creative with toppings: Feel free to experiment with different herbs, vegetables, and cheeses to create your own unique flavor combinations.
  • Serve warm: These pizza wheels are best served warm, straight from the oven.

I hope you enjoy this recipe as much as I do. It's a true testament to the fact that delicious food doesn't have to be complicated. Even a busy mom can find time to create something special for her family.
