  • 2 - 4 red chilli peppers whatever you vibe with 4 its not very spicy but its there
  • 5 - 10 button mushrooms replace with whatever mushrooms you like
  • 20 olives i used a mix of black and green but whatevs
  • 500 g spaghetti however much you want to eat really
  • 200 ml olive oil
  • bunch of fresh basil or dried if you can't get fresh

Step-by-step

    • Pre-heat your oven to 200 Degrees
    • Chop Onions, Pepper, Chillis, Garlic (crush or mince) and place in a large bowl
    • Chop the tomatoes in half, place in another large bowl
    • Cover the chopped veg and tomatoes in the olive oil and season well with salt. (Don't be a bitch, use the salt generously)
    • Place a baking sheet over a large baking tray and spread out the chopped veg evenly, like a bed of it
    • Place the halved tomatoes on-top of the veg, sliced side facing up (we want to cover the veg here as we want the tomatoes to darken and char but we don't want the smaller veg to burn.)
    • Place in oven and roast for 1 - 1.5 hours (Keep watching it, you want it to burn and char a little, it won't taste as good without. If it chars too fast, turn it down)
    • Cook Mince in a pot while the veg is roasting, once almost cooked you can optionally throw in a beef stock cube (or w/e stock for veggies) and a bit of dark chocolate to get some deep rich flavours in the meat. Leave this for a bit to soak in while you wait for the veg to finish roasting.
    • Take the veg out, scrape all the sauce and good stuff into a bowl. Chuck some fresh basil in and blend it all up.
    • Put your Spaghetti on while you finish up with the sauce (a la dente, don't wuss out and make it baby-tier soft)
    • Add the chopped mushrooms and Olives into the meat mix
    • Place the blended Sauce in with the Meat Mix and heat it up
    • Serve the Spaghetti together with the Sauce/Meat mix, chuck some Parmesan cheese and more basil on top to taste.
