  • 1 cup rice not risotto (arborio) rice, but regular white rice
  • 1 cup peas frozen is fine
  • 3 cups chicken broth if not using wine, make it 4 cups of broth
  • 1 cup dry white wine adult version. if you're making this for children, omit the wine. just add more broth in its place
  • freshly ground pepper to taste (optional)

    • If making the adult version, add the wine now. Let it absorb into the rice until only half remains.
    • Add chicken broth and salt.
    • Bring to a boil, cover and simmer for 20-30 minutes.
    • This is not a risotto and should be a little soupy.
    • Serve and sprinkle with fresh grated Parmesan, to taste.
