Papa Freddy's Herb 'n' Garlic Johnnyjacks: A Family Recipe

Papa Freddy's Herb 'n' Garlic Johnnyjacks: A South Country Comfort Food Classic

Let me tell you about a recipe that's been a staple in our family for generations – Papa Freddy's Herb 'n' Garlic Johnnyjacks. These aren't your average pancakes; they're a hearty, flavorful, and surprisingly versatile treat that's perfect for any meal. Growing up, the smell of these Johnnyjacks cooking on the stovetop was the ultimate comfort. The aroma of fresh herbs, garlic, and slightly sweet cornmeal filled our kitchen, promising a delicious breakfast, brunch, or even a unique dinner. Now, years later, I still find myself making this recipe, often sharing it with friends and family, and always relishing the warm memories it brings.

The beauty of Papa Freddy's Johnnyjacks lies not only in their delicious taste but also in their adaptability. The basic recipe is simple enough for even a novice cook, yet open-ended enough to satisfy the most creative culinary enthusiast. One of my favorite things to do is experiment with the fillings. While scrambled eggs and baked beans are traditional favorites, we've also enjoyed them with savory fillings like seasoned beef, spicy chorizo, or even leftover pulled pork. My kids particularly love them with a creamy avocado and tomato salsa. The possibilities are truly endless, allowing you to tailor this recipe to your own tastes and preferences.

Beyond their adaptability, these Johnnyjacks are also remarkably quick and easy to prepare. The batter comes together in minutes, and the cooking process is simple and straightforward. Evenings when I'm short on time but crave something comforting, these Johnnyjacks are my go-to. They are also easily customizable. The recipe calls for a mix of all-purpose and whole wheat flour, adding a slight nutty undertone. The addition of cornmeal provides a lovely texture and subtle sweetness, complementing the savory herbs. The herbs themselves—I usually use rosemary, thyme, basil, chives, and oregano—give these Johnnyjacks a fragrant and unique flavour profile. You can adjust the herbs to your taste, or even use a different blend altogether. The possibilities are endless.

The beauty of this recipe, though, extends beyond just the ingredients and the method. It's about the tradition, the shared moments, and the comforting feeling of a warm, homemade meal. The act of making these Johnnyjacks, the anticipation as they cook, the satisfying aroma that fills the kitchen – it's all part of the experience. These aren't just breakfast cakes; they are a conduit to family history, warm memories, and the joy of sharing good food with loved ones. So, gather your ingredients, put on your apron, and create some magic in your kitchen with Papa Freddy's Herb 'n' Garlic Johnnyjacks. You won't regret it. The recipe is easy, the taste is fantastic, and the memories it creates will last a lifetime.

Remember to experiment and personalize the recipe to suit your own preferences and available ingredients. You can adjust the proportions of herbs, add a pinch of red pepper flakes for a touch of heat, or swap out the beer for another liquid, like buttermilk or even some sparkling cider. The key is to have fun and create a dish that makes you and your family happy. Don't be afraid to get creative – the possibilities are truly endless.

Whether you're a seasoned chef or a kitchen novice, Papa Freddy’s Herb 'n' Garlic Johnnyjacks are a recipe that will quickly become a cherished staple in your culinary repertoire. Its simplicity, versatility, and delicious flavor profile make it a perfect choice for any occasion, from a casual weeknight dinner to a special weekend brunch. Try it, share it, and enjoy the culinary journey!

Step-by-step

    • Sift together all dry ingredients well in a large mixing bowl.
    • In another bowl blend well the eggs/milk and beer.
    • Combine slowly with the dry ingredients.
    • Mix in the melted and cooled butter last.
    • If your batter is too thin, add a little more whole wheat flour, if too thick, add a little more water.
    • Pop the batter in a bowl and refrigerate for 1/2 an hour.
    • Pull the batter from the fridge.
    • Heat a Gotham Steel Pan over medium-high heat on the stove top.
    • Once the pan has heated, lift it from the burner and pour in enough batter, swirling the pan until it coats the whole bottom of the pan.
    • Set back on the burner and cook until you see little holes forming on top of the Johnnyjack and the batter no longer glistens on top - this takes about 3 minutes or so.
    • Flip it over and let cook for about 2 1/4 minutes.
    • Let cool on racks as you make them.
    • Fill them and roll them up with scrambled eggs, baked beans, Italian/Cajun or Mexican seasoned beef/pork or venison. Use your imagination.
