Broccoli Salad
This salad is pretty and great for potlucks. Leftovers keep well if there are any. Can be made the night before. I always make this in my HUGE Tupperware bowl for get-togethers. It makes a lot, so you may want to cut in half or even smaller.

My Go-To Broccoli Salad: A Potluck Perfection

As a busy mom, I'm always looking for recipes that are easy to make, delicious, and impressive enough to bring to a potluck. This broccoli salad fits the bill perfectly. It's bright, flavorful, and always a crowd-pleaser. The best part? It can be made ahead of time, freeing up my precious time on the day of the event. I've perfected this recipe over the years, tweaking it to suit my family's taste and my busy schedule. The secret to its success? It’s all about balance; the sweetness of the sugar, the tang of the vinegar, the savory bacon, and the creamy mayonnaise all come together in perfect harmony. The slight crunch of the broccoli adds a delightful textural contrast that makes this salad so appealing.

One of my favorite things about this recipe is its versatility. You can easily adjust the ingredients to suit your preferences. Love a spicier kick? Add a pinch of red pepper flakes. Want to make it a little cheesier? Go ahead, add more! This recipe is a blank canvas, and I encourage you to experiment and make it your own. I’ve even been known to add some chopped pecans or sunflower seeds for extra crunch and flavor. The possibilities are endless!

This broccoli salad isn't just for potlucks; it's a perfect side dish for any occasion – barbecues, family gatherings, or even a casual weeknight dinner. It’s also surprisingly easy to transport. I usually make a big batch in my trusty Tupperware bowl, which keeps everything fresh and allows for easy serving. The leftovers (if there are any!) are just as delicious the next day, making this a perfect make-ahead recipe for busy weeknights. This recipe has become a staple in my home, and I hope it becomes one in yours, too.

Beyond the Bowl: Broccoli's Nutritional Powerhouse

While this recipe is undeniably delicious, it's also packed with nutrients! Broccoli, the star of the show, is a nutritional powerhouse, rich in vitamins, minerals, and antioxidants. It's a great source of vitamin C, vitamin K, and fiber, all vital for maintaining good health. Including broccoli in your diet regularly can contribute to a stronger immune system, improved digestion, and reduced risk of chronic diseases.

Tips for Broccoli Salad Success

Here are a few tips to ensure your broccoli salad is as perfect as mine:

  • Don't overcook the broccoli: You want it to be tender-crisp, not mushy. Steam it until it's bright green and still retains a slight crunch.
  • Use high-quality ingredients: The flavor of this salad relies on the quality of its components. Opt for fresh broccoli and good-quality mayonnaise.
  • Make it ahead of time: The flavors meld beautifully when the salad has time to chill in the refrigerator. At least an hour or two is recommended.
  • Adjust to your taste: This recipe is a guideline; feel free to adjust the seasonings and ingredients to your preferences.

Serving Suggestions:

This broccoli salad is a versatile side dish that pairs well with a wide variety of main courses. Try serving it alongside grilled chicken, BBQ ribs, burgers, or even a simple roast. It also makes a fantastic addition to picnics and potlucks.

Storage:

Store leftovers in an airtight container in the refrigerator for up to 3 days. The flavors actually get better with time!

I hope you enjoy this recipe as much as I do! Happy cooking!

Step-by-step

    • Cook bacon in large skillet over medium heat until crispy. Reserve few tablespoons of drippings. Crumble bacon and set aside.
    • Cook onion in a non-stick skillet just enough to take the strongness away from the onion, but DON'T cook long enough to change the color of the onion.
    • Steam the broccoli until it brightens, but is still crunchy in texture. Allow to cool.
    • Prepare the dressing in a small bowl. Whisk together all ingredients, except bacon crumbles, cheese, onion, and broccoli, until smooth.
    • In large bowl, combine bacon, broccoli, onion, and cheese.
    • Add dressing and stir well to coat all the broccoli.
    • Cover and refrigerate until cool and ready to serve. At least an hour or two.
