My Unexpectedly Delicious Almond Pulp Chocolate Chip Bars

As a busy working mom, finding healthy and delicious snacks for myself and my family is always a top priority. I'm constantly juggling work deadlines, school pick-ups, and the never-ending to-do list, so convenience is key. That’s why I was so thrilled when I stumbled upon this recipe for almond pulp chocolate chip bars. I’d been making almond milk regularly, and always wondered what to do with the leftover pulp. This recipe perfectly utilizes that often-discarded ingredient, transforming it into something truly special.

I initially approached this recipe with a degree of skepticism. Almond pulp? Seriously? Could something so seemingly unassuming actually produce delicious, satisfying bars? My doubts quickly vanished after the first bite. The bars are surprisingly chewy and rich, with a delightful balance of sweetness from the maple syrup and the satisfying crunch of chocolate chips. The almond pulp provides a subtle nutty flavor and a pleasant texture that’s somewhere between a cookie and a brownie. It’s honestly the perfect after-school snack for my kids, a satisfying treat for my husband, and a quick energy boost for me during those long workdays.

What surprised me most was the simplicity of the recipe. The ingredients are readily available, and the instructions are straightforward, even for someone like me who isn't exactly a culinary expert. The preparation time is minimal, and the baking time is relatively short, making it a perfect weeknight treat. I love that it allows me to use up the almond pulp that would otherwise go to waste, making it a wonderfully resourceful and economical recipe.

Beyond its convenience and deliciousness, these bars also offer a guilt-free indulgence. They’re naturally sweetened with maple syrup, providing a healthy dose of sweetness without the refined sugar crash. The oats and almond pulp add fiber, contributing to a feeling of fullness and sustained energy. And let’s not forget the healthy fats from the almond butter – a perfect combination of deliciousness and nutrition.

These bars have become a staple in my household. I often make a double batch, keeping some on hand for quick snacks throughout the week. They’re perfect for packing in lunchboxes, grabbing on the go, or enjoying with a cup of coffee or tea. The best part is, they’re surprisingly versatile. I’ve experimented with different variations, adding dried cranberries, chopped nuts, or even a sprinkle of sea salt on top. The possibilities are endless!

This recipe truly embodies my philosophy on cooking: simple, healthy, delicious, and above all, convenient. It's a testament to the fact that deliciousness doesn’t always require complicated techniques or exotic ingredients. Sometimes, the most satisfying treats are born from resourceful simplicity and a little bit of experimentation. So, give this recipe a try. You might be surprised at how much you love these unexpected little almond pulp chocolate chip bars.

Step-by-step

    • Before following the recipe, if you are using homemade almond pulp, make sure you have squeezed out the excess moisture really well from preparing the almond milk. Paper towel dry it and store in the fridge overnight, as this helps to dry it out.
    • Preheat an oven to 350 degrees and line a 9X5 loaf pan with parchment paper hanging over the sides for easy removal later.
    • Mix the syrup and flaxseed in a cup well with a fork and set aside for 10 minutes to gel up. Do not skip this step, as it is what acts as the "egg" and binds the bars to hold their shape.
    • In a large bowl, combine the almond pulp (or almond flour), oats, cinnamon and salt and whisk well. Stir in the chocolate chips. I prefer mini because they disburse well and stay intact better.
    • After the 10 minutes is up for the syrup and flaxseed mixture, stir in the almond butter and vanilla until very smooth. Pour over the dry ingredients and stir for a couple of minutes until very sticky and absorbed, pressing with the back of your spoon to help mix.
    • Add the dough to the loaf pan and spread out evenly and flat with a rubber spatula. You can slightly dampen your fingers to help press it down around the edges, as it will be sticky.
    • For dough using almond pulp, bake for 30-32 minutes until very golden brown and firm on top. For dough using almond flour, bake about 27-30 minutes until very golden brown and firm on top.
    • Cool 1 hour before cutting, or they will fall apart. They firm up a lot as they cool.
    • If desired, melt some chocolate chips and drizzle the tops for added sweetness or for presentation purposes. Slice very carefully into 8 bars.
    • Wrap each individually in plastic wrap and store in the fridge. They will hold their shape very well this way and it makes for an easy grab-and-go snack!
