This recipe is great if you love to grill. Try to make this a day in advance as the marinade really pays off with an overnight soak. I have included the drizzle but you can skip it if you want. The chicken tastes awesome with or without it.

Big Chick in Little Sicily

A Sicilian Summer Feast: Big Chick, Little Island

The sun beat down on my shoulders, the scent of salty air and blooming jasmine heavy in the breeze. I’d traded my usual city hustle for a sun-drenched Sicilian escape, and as I sat on my balcony overlooking the turquoise Mediterranean, I knew this was more than just a vacation; it was a culinary adventure. My days were filled with exploring ancient ruins, wandering charming cobblestone streets, and indulging in the freshest ingredients imaginable. But the highlight of each day? Unquestionably, the grilling. And this Big Chick in Little Sicily recipe? It’s a testament to those sun-kissed evenings.

This recipe isn't just about throwing some chicken on the grill; it's about the experience, the anticipation. The slow marinade, the careful grilling, the satisfaction of creating something truly special. It's about savoring the taste of sunshine and the simple pleasures of good food and even better company. Whether you're sharing it with loved ones on a balmy summer evening or treating yourself to a luxurious solo meal, this chicken is guaranteed to transport you. The marinade itself is a symphony of flavors – a vibrant blend of herbs, garlic, and lemon that penetrates deep into the chicken, tenderizing the meat and imbuing it with an irresistible aroma. And the drizzle? Oh, the drizzle. It's a final flourish, a burst of bright citrus and fresh herbs that elevates the dish to something truly unforgettable. It's the kind of recipe that whispers of lazy afternoons and unforgettable sunsets, a recipe that perfectly captures the essence of Sicilian summer.

The key to this recipe, I've discovered, lies in the preparation. Allowing the chicken to marinate for at least six hours (ideally overnight) is crucial. This ensures that those wonderful flavors have ample time to permeate the meat, resulting in a succulent and incredibly flavorful final product. And the grilling process itself? Patience is key. Indirect heat is the secret weapon here, preventing the chicken from burning while ensuring it cooks through evenly. It’s a testament to the slow, deliberate way of life I’ve come to appreciate during my stay.

Beyond the Grill: This recipe is wonderfully versatile. Imagine swapping out the Italian parsley for other fresh herbs, such as oregano or thyme. Feel free to experiment! The marinade is also incredible with other types of poultry, such as turkey or even duck. And let’s not forget the versatility of the drizzle. It’s a fantastic accompaniment to grilled vegetables, fish, or even a simple salad. This is more than a recipe; it’s an invitation to explore your culinary creativity and let your taste buds embark on a journey to the sun-drenched shores of Sicily.

Memories Made on the Grill: More than just a delicious meal, this chicken represents a cherished moment from my Sicilian adventure. It’s the embodiment of sun-drenched days, laughter-filled evenings, and the simple joy of creating something delicious in a beautiful setting. It’s a recipe I'll carry with me long after my vacation ends, a reminder of the flavors, sights, and memories that make this place so special.

Step-by-step

    • Clean and splay chickens.
    • Mix marinade and pour into two large zip lock bags dividing it equally.
    • Let chickens sit in the fridge for at least 6 hours and no more than 24 hours.
    • Make drizzle by combining all ingredients and mix well.
    • When ready to grill, grill chicken on indirect heat by turning the outside burners on low to med heat while middle burners are off or on very low. If your grill doesn't allow a low enough setting on the middle burner, turn it off.
    • The inside temp of your grill should be around 350-375 degrees.
    • Cook chicken breast side down to start, for about 40-45 minutes.
    • Cook second side about 30 minutes.
    • Remove from grill and let rest for about ten minutes before serving.
    • Serve the drizzle on the side.
