Ingredients that make it work:

1. Ritz Crackers: Their buttery flavor pairs perfectly with the chicken. The crunch adds a delightful texture contrast.

2. Challenge Butter: This brand is my personal favourite for its rich flavour and buttery aroma. Feel free to substitute another good quality butter.

3. Fresh Herbs: While I haven't specifically included them in the recipe, fresh herbs such as parsley, thyme or rosemary, added to the cracker mixture before coating the chicken, take the dish to another level.

4. Lean Chicken Breast: Ensures a healthy and delicious outcome.

Making it your own:

This recipe is a wonderful starting point, and I encourage you to have fun with it. Consider adding:

  • Different spices: Experiment with paprika, cayenne pepper or other spices to suit your taste.
  • Vegetables: Add diced onions, mushrooms, or bell peppers to the baking dish alongside the chicken.
  • Cheese: Sprinkle some grated parmesan cheese over the top before baking for extra flavour.
  • Sauces: A drizzle of your favourite barbecue sauce or honey after baking adds sweetness and complexity.

Regardless of how you choose to customize it, this simple butter chicken recipe is sure to become a staple in your kitchen. It's a testament to the fact that delicious food doesn't have to be complicated. Enjoy the ease, the taste, and the satisfaction of creating a wonderful meal for yourself or your loved ones!
