My Unexpected Culinary Adventure: Cheesy Cauliflower Breadsticks

As a busy working mom, finding time for elaborate cooking is a luxury I rarely afford myself. My days are a whirlwind of meetings, school runs, and the endless to-do list that seems to multiply overnight. So, when I stumbled upon this recipe for cheesy cauliflower breadsticks, I was initially skeptical. Cauliflower? In breadsticks? It sounded… adventurous, to say the least. But with a pantry stocked with leftover cauliflower and a desperate need for a quick, healthy, and (dare I say) delicious snack, I decided to take the plunge.

The initial steps were surprisingly straightforward. Ricing the cauliflower with my food processor was faster than I anticipated. The aroma of garlic and oregano wafting from the bowl as I mixed in the eggs and cheese filled the kitchen with a comforting warmth, a small beacon of domesticity in the midst of my hectic life. I opted to shape my mixture into breadsticks, envisioning them as a healthier alternative to the carb-heavy counterparts I often crave. The baking process was mesmerizing; watching the golden crust develop was oddly therapeutic. It was a welcome break from emails and spreadsheets. The final product far exceeded my expectations. The breadsticks had a satisfying chewiness, and the cheesy flavor was intense, surprisingly close to the real deal.

I’ve experimented with different cheeses, herbs, and spices, creating a variety of flavors to suit every taste. They're perfect as an appetizer, a side dish, or even a light meal on their own. They are a healthy substitute for traditional breadsticks without compromising taste. The kids love them dipped in marinara sauce, while my husband enjoys them alongside a hearty soup. Step-by-step

    • Preheat oven to 425 F degrees.
    • Prepare 2 pizza dishes or a large baking sheet with parchment paper.
    • Make sure your cauliflower is roughly chopped in florets.
    • Add the florets to your food processor and pulse until cauliflower resembles rice.
    • Place the cauliflower in a microwavable container and cover with lid.
    • Microwave for 10 minutes.
    • Place the microwaved cauliflower in a large bowl and add the 4 eggs, 2 cups of mozzarella, oregano, garlic and salt and pepper.
    • Mix everything together.
    • Separate the mixture in half and place each half onto the prepared baking sheets and shape into either a pizza crust, or a rectangular shape for the breadsticks.
    • Bake the crust (no topping yet) for about 25 minutes or until nice and golden.
    • Don't be afraid the crust is not soggy at all.
    • Once golden, sprinkle with remaining mozzarella cheese and put back in the oven for another 5 minutes or until cheese has melted.
    • Slice and serve.
