Slow Cooker Chicken Tikka Masala

Slow Cooker Chicken Tikka Masala
Slow Cooker Chicken Tikka Masala
I halved this recipe but used four thighs and a whole jalapeno. Because the jalapeno is only pricked with a knife, the heat is at a controlled level in the dish. If you halve the recipe and opt to also cut a jalapeno in half, be prepared for additional heat because the seeds will have a chance to release into the stew. For a half recipe, I set the slow cooker for 4 hours on low and the chicken was perfectly cooked.

Slow Cooker Chicken Tikka Masala: A Weeknight Winner

My Favorite Slow Cooker Chicken Tikka Masala

As a busy working mom, finding time to cook delicious and healthy meals can be a real challenge. Weeknights are often a whirlwind of school pick-ups, homework battles, and the never-ending cycle of laundry. That’s why I rely heavily on my trusty slow cooker—it’s my secret weapon for creating flavorful dinners without spending hours in the kitchen. This Slow Cooker Chicken Tikka Masala recipe is a perfect example of how simple and satisfying weeknight cooking can be.

This recipe is incredibly versatile. I often adjust it to suit my family's preferences and what I have on hand. Sometimes I use chicken breasts instead of thighs, or I add extra vegetables like bell peppers or spinach. The beauty of a slow cooker recipe is its forgiving nature; you can experiment with different ingredients and flavors without worrying about ruining the dish. I’ve even been known to throw in a handful of frozen peas at the end for added nutrition and color.

The aroma that wafts through the house as this dish simmers is truly intoxicating. The blend of warm spices—coriander, cumin, garam masala—creates a rich and inviting scent that promises a comforting meal. My kids always come running when they catch a whiff of it, and honestly, I can’t blame them. It's the perfect balance of sweet, savory, and subtly spicy, making it a crowd-pleaser for both adults and children (even the picky eaters!).

The best part? The clean-up is a breeze! Simply transfer the chicken and sauce to a serving dish, and the slow cooker pot practically cleans itself. It's this ease of preparation and minimal clean-up that truly makes this recipe a winner in my busy life. This recipe is a lifesaver on those nights when I feel overwhelmed and need a quick, satisfying, and delicious meal that feels a little bit luxurious without the fuss.

Tips and Variations:

  • Spice Level: Adjust the amount of jalapeno to control the heat. A pricked jalapeno will add a hint of spice without being overly hot. For a spicier dish, finely chop the jalapeno.
  • Chicken: Bone-in, skin-on chicken thighs will add more flavor and richness to the sauce. Alternatively, use chicken breasts for a leaner option.
  • Vegetables: Add other vegetables, such as diced bell peppers, onions, or spinach, for a heartier and more nutritious meal. Add them along with the onions and garlic in step 2.
  • Cream: Coconut milk can be used as a substitute for heavy cream, offering a slightly different flavor profile.
  • Serving Suggestions: Serve this Chicken Tikka Masala over basmati rice, naan bread, or cauliflower rice. Garnish with fresh cilantro and a squeeze of lime for extra brightness.

This Slow Cooker Chicken Tikka Masala isn't just a recipe; it's a testament to the power of simple cooking techniques and readily available ingredients. It's a meal that brings my family together, nourishes our bodies, and most importantly, saves me precious time on busy weeknights. So, ditch the takeout menus and embrace the ease and deliciousness of this slow-cooker masterpiece!

Ingredients: (This is a full recipe, adjust as needed)

  • 9 whole boneless chicken breasts
  • 2 tbsp ground coriander
  • 2 tbsp ground cumin
  • 2 tsp kosher salt
  • 2 cups non-fat plain Greek yogurt
  • 2 whole jalapeno peppers, stem removed, peppers pierced several times with a sharp knife
  • 8 tbsp butter
  • 2 whole large onions, peeled and diced
  • 12 cloves garlic, peeled and minced
  • 2 tbsp kosher salt
  • 6 tbsp garam masala
  • 2 pieces fresh ginger, about 4-6 inches, peeled and grated or very finely minced
  • 8 cups crushed tomatoes
  • 2 tbsp sugar
  • 4-6 tbsp heavy cream
  • 4 cups cooked rice
  • cilantro for garnish

Step-by-step

    • Cut the boneless, skinless chicken thighs into 1-1 1/2 inch pieces. Sprinkle the coriander, cumin and salt over the chicken, then stir in the yogurt until all the pieces are evenly coated. Place the chicken in the bottom of a 6-quart slow cooker and put the jalapeno on top of the chicken.
    • To prepare the sauce, melt butter in a medium saute pan over medium high heat. Add the onions, garlic, and salt, then stir. Cook, stirring frequently, until the onions begin to lightly brown around the edges.
    • Stir in the garam masala and ginger and cook until fragrant (about 1 minute) before adding the crushed tomatoes and sugar. Stir well, scraping the caramelized bits from the bottom of the pan, and bring to a boil. Pour the sauce over the chicken in the slow cooker.
    • Cover and cook on low for 5 hours, or until the chicken is very tender.
    • Pour heavy cream into the slow cooker and stir gently until the color is even. Replace the lid and let cook for 10 minutes or until bubbly around the edges.
    • Serve over hot rice topped with a generous amount of chopped cilantro.
