My Secret to the Best Pasta Sauce

As a busy working mom, finding time to cook delicious and healthy meals can be a challenge. That's why I've perfected this incredibly simple yet unbelievably flavorful pasta sauce recipe. It's become a staple in our home, a comforting classic that's as versatile as it is delicious.

What makes this sauce so special? It's not just about the ingredients, though those certainly play a crucial role. It’s about the process. The slow simmering, the careful attention to detail – these are the things that transform simple canned tomatoes and pantry staples into a truly unforgettable sauce. It's a testament to the fact that sometimes, the most satisfying dishes are the ones that take a bit of time and care. The aroma alone, as it simmers on the stove, filling the kitchen with a warm, inviting fragrance, is enough to make anyone’s day a little brighter.

One of the things I love most about this recipe is its versatility. It’s fantastic served over pasta, of course, but it’s also wonderful with rice, polenta, or even as a pizza topping. The rich, deep flavor complements a variety of dishes, making it a versatile addition to your culinary repertoire. I often double the recipe so I have leftovers for another meal throughout the week. It’s even better the second day!

Tips and Tricks for Pasta Sauce Perfection

Over the years, I've learned a few tricks for making this sauce even better. Firstly, don't be afraid to experiment with the seasonings. A pinch of oregano, a dash of red pepper flakes – these subtle adjustments can completely transform the flavor profile. Secondly, the quality of your ingredients does matter. Using a good quality extra virgin olive oil makes a noticeable difference in the taste of the final product. Thirdly, patience is key. Allowing the sauce to simmer for at least an hour allows the flavors to meld and deepen, creating a sauce that is far superior to one that’s rushed. Trust me on this one!

Step-by-step

    • On your cutting board chop and smash the garlic into a paste with the salt.
    • Heat a large saucepan with the oil in it over medium-high heat.
    • Add the onions and garlic to the pan and cook for about 8 minutes or until the onions are all brown.
    • Add the chicken broth to the pan and scrape the bottom to get all the flavor bits off of it.
    • Crush the tomatoes into the pan using your hand (it's a little gross but it will give the sauce a texture like you've never seen).
    • Add the tomato paste and all of the seasonings except the parsley and basil.
    • Stir to combine.
    • Bring to a soft boil, turn the heat to low and cover.
    • Let it simmer for 1 to 1 1/2 hours, stir occasionally.
    • Add the parsley and basil.
    • Serve over pasta, rice, pizza, anything.
