Mornings in our house are a whirlwind. I stumbled upon this recipe while browsing for healthy breakfast ideas that wouldn't require me to stand over the stove for an hour before the school bell rang. The spiralized vegetables add a beautiful texture and a surprising amount of flavor without weighing the casserole down. The best part? I can prep this the night before and pop it in the oven the next morning. It's my secret weapon for stress-free mornings. The kids love it too, which is a huge bonus! They get a healthy dose of vegetables, protein, and fiber without even realizing it, making it the perfect stealthy way to get them to eat their veggies.
