It's a dish that's both impressive and surprisingly easy to execute, even on a weeknight.

The beauty of this recipe lies in its simplicity. The rich, savory pork roast, perfectly seasoned and seared, is the star of the show. But the sauerkraut provides a wonderful counterpoint, adding a tangy and slightly sweet element that balances the richness of the pork beautifully. The caraway seeds and onions further enhance the flavour profile, adding depth and complexity. The whole thing cooks low and slow, allowing the flavours to meld and develop, resulting in a truly unforgettable culinary experience.

What I particularly love about this recipe is its versatility. You can serve it as a main course for a family dinner, or even repurpose the leftovers for sandwiches or salads the next day. The tender pork practically melts in your mouth, and the sauerkraut provides a delicious textural contrast. And the best part? Minimal cleanup! One pot is all you need, which is a huge win after a long day.

The aroma alone as it simmers is enough to make your mouth water. It’s the perfect comfort food for a chilly evening. Step-by-step

    • Preheat oven to 325F, rack in the middle.
    • Pat the pork dry and sprinkle the entire roast with salt, pepper and smoked paprika.
    • Heat a large non-stick pan over medium-high heat and add in the olive oil.
    • When the olive oil starts to simmer carefully place the pork roast in.
    • Sear on all sides until golden brown - ~5-8 minutes per side.
    • In a lidded 6qrt Dutch Oven place the sauerkraut all over the bottom.
    • Sprinkle over the caraway seeds, onions and brown sugar.
    • Place the seared pork roast on top nestling it in the sauerkraut.
    • If you’ve drained your sauerkraut, add the water. If you did not you do not need the water.
    • Cover tightly with a lid and bake for about 2 hours or until a meat thermometer reads 150F.
    • Remove from the oven.
    • Carefully remove the roast from the pan and place on a cutting board covering loosely with foil.
    • Allow to cool for about 15 minutes before slicing.
