I usually make a double batch and have leftovers for lunch the next day – a win-win! The crispy, golden-brown spring rolls are filled with a savory blend of tender pork, earthy mushrooms, and aromatic ginger and garlic. It's a delightful combination of textures and flavors that never fails to impress.

One thing I love about this recipe is how easily it can be customized. If I'm feeling adventurous, I'll add some finely chopped carrots or bell peppers to the filling for an extra boost of color and nutrients. The sweet chili dipping sauce adds the perfect touch of sweetness and spice, balancing the savory flavors of the pork and mushrooms. I often experiment with different dipping sauces; sometimes I'll use a peanut sauce or even a simple soy sauce-based dipping sauce. The possibilities are endless!

Beyond the ease and deliciousness, this recipe is also incredibly budget-friendly. Pork is a relatively inexpensive protein, and the other ingredients are readily available at most grocery stores. Tips for Success:

  • Don't overfill the wonton wrappers; otherwise, they will be difficult to seal and may burst during frying.
  • Fry the spring rolls in batches to ensure they are evenly cooked and crispy.
  • Serve immediately for the best results.
  • Get creative with your dipping sauce! Experiment with different flavors to find your favorite.

I hope you enjoy this recipe as much as I do. Happy cooking!

Step-by-step

    • In a small mixing bowl, mix the flour with the water until it's a paste.
    • In a skillet heat the sesame oil over medium heat. Add garlic and ground pork. Fry until pork is no longer pink.
    • Add mushrooms, ginger, coriander, hot sauce and season with salt and pepper.
    • Transfer to a plate.
    • Start assembling the spring rolls. Place a wonton wrapper on your work surface and add about a tbsp of the filling in the middle. Don't add too much filling because you won't be able to roll.
    • Roll the wrapper forward, wrap both ends and continue rolling.
    • Close both ends with the flour paste.
    • Continue with remaining wontons.
    • Add vegetable oil in a skillet, about ½ inch deep. When hot, deep fry the spring rolls until golden and crispy.
    • Remove from skillet and drain over paper towels.
    • Serve with sweet chili sauce.
