Ingredients

For the Doughnuts:

  • 1/2 cup chopped pecans
  • 1/2 cup coconut sugar
  • 1/4 cup oat flour
  • 1 tsp. vanilla
  • 1 tsp. baking powder
  • 1 cup gluten-free flour
  • 3/4 cup chai latte (1-2 tsp. loose leaf chai + 3/4 cup of milk)
  • 1/4 cup apple sauce

For the Frosting:

  • 1 cup cashews
  • 1/2 cup water
  • 2 tbsp. maple syrup

For the Candied Pecans:

  • 3 tbsp. maple syrup

Step-by-step

    • Place all of the dry ingredients into a bowl and stir well
    • Gently heat the milk and chai tea in a small pan, removing before it reaches boiling point
    • Strain the tea from the milk and combine with the apple sauce
    • Pour the liquid mixture into the bowl of dry ingredients.
    • Stir until the mixture is well combined and pour ½ cup of mixture into each doughnut ring.
    • Bake for 15 minutes, at this point a knife should come out clean
    • Leave to cool before applying the frosting
    • Once cool, apply the frosting and sprinkle with candied pecans
    • To make the frosting place all of the ingredients into a blender and blend until smooth.
    • To make the candied pecans, place the pecans into a small pan over a gently toast for a couple of minutes. Once toasted add in the maple syrup and stir constantly until the pecans are covered. Remove from the heat and place the pecans on a piece of baking paper. Leave to cool before breaking the pecans apart
