My Favorite Weeknight Dinner: Arroz Con Pollo

As a busy working mom, finding time to cook a delicious and healthy dinner can feel like a Herculean task. Many nights, the siren song of takeout wins, but I’ve recently discovered a recipe that’s completely changed my weeknight routine: Arroz con Pollo. This one-pot wonder is not only incredibly flavorful but also incredibly easy to make. It’s become a staple in our household, a versatile dish that satisfies everyone, from my picky eater to my husband who loves a hearty meal. The best part? Cleanup is a breeze – just one pot to wash! What’s not to love?

The beauty of Arroz con Pollo lies in its simplicity. The ingredients are readily available at most grocery stores, and the cooking process is remarkably straightforward. There's no complicated chopping or intricate techniques required – it's the perfect recipe for even the most novice cook. I often adapt the recipe to what I have on hand. Sometimes I add extra vegetables like corn or peas, other times I substitute different types of rice depending on my preference. The recipe is incredibly forgiving, allowing for creative variations and personal touches. It’s a great way to use up leftover chicken, too – just shred it and toss it in!

What truly makes this dish special, however, is the incredible flavor. The combination of savory chicken, fragrant rice, and juicy tomatoes creates a symphony of taste. The Creole seasoning adds a kick, balancing the sweetness of the peppers and the richness of the broth. Every bite is a delightful explosion of textures and tastes, leaving you feeling satisfied and energized. My children, who usually have to be coaxed to try new foods, gobble this up. I serve it with a dollop of sour cream and a sprinkle of shredded cheese, adding an extra layer of creaminess and sharpness to the dish.

Beyond its ease and deliciousness, Arroz con Pollo is also remarkably versatile. It’s perfect for a casual weeknight dinner, but it’s also elegant enough for a weekend gathering with friends. I’ve even served it at potlucks, and it’s always a huge hit. The leftovers are fantastic, too – just reheat and enjoy a quick and satisfying lunch the next day. I often double the recipe, ensuring I have plenty left for work lunches or quick snacks.

This recipe has not only simplified my weeknight dinners but has also brought a new level of joy to my cooking. It’s a reminder that delicious and healthy meals don’t have to be complicated or time-consuming. With a few simple ingredients and a little bit of effort, you can create a culinary masterpiece that will impress your family and friends – and leave you with more time to enjoy the things that truly matter. So, give this recipe a try, and experience the magic of Arroz con Pollo for yourself! You won’t regret it.

Ingredient Variations and Tips:

  • Chicken: Feel free to experiment with different cuts of chicken, such as thighs or drumsticks. Bone-in chicken will add extra flavor to the broth.
  • Rice: Brown rice, wild rice, or even quinoa can be substituted for white rice, depending on your preference and dietary needs.
  • Vegetables: Get creative with your vegetables! Add corn, peas, carrots, zucchini, or any other vegetables you enjoy.
  • Spices: Experiment with different spices and herbs to customize the flavor of your Arroz con Pollo. Cumin, paprika, or chili powder are great additions.
  • Broth: For a richer flavor, use homemade chicken broth instead of store-bought.
  • Toppings: Get creative with your toppings! Avocado slices, chopped cilantro, or a squeeze of lime juice can add extra flavor and flair.

This simple, yet incredibly satisfying dish has become a constant in my busy life. It's a dish that's both comforting and exciting, a testament to the magic of simple ingredients combined with a touch of love.

Step-by-step

    • Cut your chicken breasts into bite-size pieces and season with Creole seasoning.
    • Dice your onion & bell peppers.
    • Heat a medium to large Dutch oven or pot over medium-high heat and add a tablespoon of olive oil.
    • Once the pot is heated, toss in your chicken and brown on all sides. The chicken does not need to be cooked through, just browned.
    • Remove the chicken from the pot.
    • Add another tablespoon of oil and heat to medium, add in your diced onions & peppers.
    • Cook until they are soft, about 5-8 minutes. As they cook you should be able to scrape some of the brown bits left from the chicken off the bottom of the pan.
    • Add the rice package and stir it in with the veggies.
    • Add the Hunt's diced tomatoes and the chicken broth, stir to combine.
    • Dump the chicken back in as well.
    • Bring it to a simmer, once it starts to simmer cover it, turn the heat to medium-low and let cook for 30-40 minutes.
    • You know it's done when the rice is fully cooked.
    • Serve warm with shredded cheese and sour cream.
    • Enjoy!
