Step-by-step

    • Put the oven to 350 degrees F.
    • Mix together flour, sugar, whole almonds, fine ground almonds, baking soda, baking powder, salt and cinnamon.
    • In a separate bowl, blend honey, water, and extract and then add to the dry.
    • Turn the dough on a floured surface.
    • Divide the dough in half and make into logs.
    • Place the logs onto a greased sheet and put in the oven for 30 minutes. (if you have air bake, use it because then the bottom of the biscotti log isnt burned.)
    • Remove and cool for 10 minutes.
    • Cut with serrated knife into slices 1/2-1/4 inch thick.
    • Put on the baking sheet and bake for 10-15 more minutes.
    • Put on the racks to cool.
