BBQ Meatballs: A Simple Recipe for Any Occasion

My Go-To BBQ Meatball Recipe: Perfect for Potlucks and Weeknight Dinners

As a busy working mom, I'm always on the lookout for recipes that are both delicious and easy to make. These BBQ meatballs have become a staple in my household, and they’re a crowd-pleaser every time. Whether it's a casual weeknight dinner or a potluck gathering, this recipe is a lifesaver. The beauty of this recipe lies in its simplicity. The ingredients are common pantry staples, and the steps are straightforward, even for beginner cooks. I often find myself adapting this recipe based on what I have on hand. Sometimes I add a touch of chili powder for a little kick, other times I’ll use different types of ground meat – a blend of beef and pork works particularly well. The possibilities are endless!

The secret to truly amazing meatballs lies in their size. I’ve learned from experience (and a few less-than-perfect batches) that smaller is definitely better. Tiny meatballs ensure even cooking and maximum flavor absorption from the rich BBQ sauce. Don't be afraid to make them bite-sized – they’ll cook faster and be perfect for easy snacking. I often double (or even triple!) this recipe when I know I’ll have guests, and it's always a hit. The sauce itself is a masterpiece of sweet and tangy perfection. The combination of brown sugar, cider vinegar, and tomato sauce creates a depth of flavor that's simply irresistible. A little bit of cayenne pepper adds a subtle warmth that perfectly complements the sweetness.

The best part? These meatballs are incredibly versatile. They're fantastic served as an appetizer, a main course with a side of rice or mashed potatoes, or even as a topping for your favorite pasta dish. They're also perfect for meal prepping – make a big batch on the weekend and enjoy delicious, easy meals throughout the week. One of my favorite ways to serve these is in a slow cooker, keeping them warm and ready for guests. The slow cooker's gentle heat keeps the meatballs moist and flavorful, making them even better than when freshly cooked. They're also great for potlucks, as they can be transported easily and stay warm without requiring much attention.

Tips for Success:

  • Don't overmix the meatball mixture – gently combine the ingredients to avoid tough meatballs.
  • Use a cookie scoop for uniform-sized meatballs.
  • Brown the meatballs well before adding them to the sauce for maximum flavor.
  • Simmer the sauce long enough to allow the flavors to meld.
  • Experiment with different spice combinations – add a dash of Worcestershire sauce, smoked paprika, or your favorite BBQ rub for extra flair.

These BBQ meatballs are more than just a recipe; they're a testament to the power of simple ingredients combined with a little love and care. They're a crowd-pleaser, a weeknight lifesaver, and a reminder that even the simplest dishes can bring joy and satisfaction to the table. So, give this recipe a try, and let me know what you think! I’m always happy to hear from fellow food lovers and discover new variations on this timeless classic.

Step-by-step

    • Meatballs: In a large bowl combine beef, egg, bread crumbs, onion, milk, garlic, salt, pepper & mustard. Mix well using hands. Shape into very tiny meatballs. Heat oil in large skillet, and brown meatballs on several sides. Remove from skillet and place on a large platter or bowl.
    • BBQ Sauce: In a small bowl combine sauce ingredients. Mix well. Pour into a large saucepan. Simmer for 15 minutes to blend flavors.
    • Add meatballs to the sauce and stir gently. Bring to a boil. Reduce heat to low and simmer until meatballs are hot all the way through.
    • Serve in a corningware dish, or a crockpot if it's for a potluck.
