My Comfort Food: A Creamy Potato and Sausage Soup

Life's a whirlwind, isn't it? Between work deadlines, juggling errands, and making sure everyone in the family is fed and happy, it’s easy to forget to take a moment for myself. But lately, I've been trying to prioritize little pockets of self-care, and one of my favorite ways to unwind after a long day is by making a big pot of comforting soup. This potato and sausage soup is my absolute go-to – it's hearty, flavorful, and incredibly easy to make, even on a busy weeknight.

The aroma alone is enough to melt away stress. Imagine this: the savory scent of sizzling sausage mingling with the earthy fragrance of potatoes, all enhanced by a hint of spicy Creole seasoning. It's the kind of smell that instantly transports you to a cozy kitchen, filled with warmth and the promise of a delicious meal. And the best part? It comes together remarkably quickly. I often start this soup while prepping other things for dinner; it’s low maintenance enough to let simmer away without demanding constant attention.

The Magic of Simplicity

What I love most about this recipe is its simplicity. It doesn’t require a long list of exotic ingredients or complicated techniques. Just a few staple items from your pantry and fridge will do the trick. I use frozen hash browns for convenience, but feel free to use freshly diced potatoes if you have the time. I prefer Jimmy Dean sausage for its classic flavor, but any breakfast sausage will work just fine. And that creamy texture? It’s all thanks to a can of cream of potato soup and a splash of milk. No fancy techniques, just pure comfort.

Beyond the Bowl: A Culinary Adventure

This soup is much more than just a meal; it's a canvas for creativity. While the basic recipe is already delicious on its own, don't be afraid to experiment and personalize it to your liking. One day, I might add a handful of fresh spinach for extra nutrients. Another day, I might swap out the cheddar jack cheese for some sharp white cheddar or even a sprinkle of parmesan. The possibilities are endless!

For a richer flavor, you could sauté some diced bell peppers or mushrooms along with the onions. Adding a touch of garlic would also elevate the taste profile significantly. And if you're feeling adventurous, a dollop of sour cream or a sprinkle of fresh herbs, such as chives or parsley, just before serving, can add a delightful finishing touch. Really, the only limit is your imagination.

More Than Just a Recipe: A Ritual of Comfort

For me, this potato and sausage soup represents more than just a recipe; it's a ritual. It's a comforting practice that helps me disconnect from the demands of my day and focus on the simple pleasure of preparing a nourishing meal. The rhythmic chopping of onions, the satisfying sizzle of the sausage in the pan – these small acts of preparation are meditative in their own way. And the feeling of sharing this warm, hearty soup with loved ones? Priceless.

So, the next time you’re feeling overwhelmed or just need a little pick-me-up, I encourage you to try this recipe. It's a simple act of self-care that can bring unexpected joy and comfort. It’s a reminder that even in the midst of a busy life, there’s always time for a little warmth, a little flavor, and a lot of love, all served in a cozy bowl of potato and sausage soup.

A Final Thought: Embrace the Imperfect

Cooking, like life, is not always perfect. Sometimes the sausage browns a bit too much, or the potatoes aren't quite as evenly cooked as I'd like. But that's perfectly okay! The beauty of homemade food is its imperfection. It's a reflection of our own unique approach to cooking, our own individual touch. So, don't stress over getting every detail just right. Embrace the imperfections, savor the flavors, and enjoy the process. Happy cooking!

Step-by-step

    • In a large pot, brown sausage.
    • Once browned remove to a paper towel-lined plate.
    • Add olive oil and then chopped onion.
    • Add hashbrowns and saute for about 7 or 8 minutes or until potatoes are starting to brown and softened.
    • Add creole seasoning while browning.
    • Add sausage back to pot along with cream of potato soup and stir to combine.
    • Add milk and stir.
    • Bring soup to a boil and then reduce to simmer, stirring frequently.
    • Soup will thicken after about 5 to 7 minutes.
    • Once thickened, turn off heat.
    • While soup simmers, cook bacon in a separate skillet until crispy.
    • Remove to a paper towel and crumble once cooled.
    • Ladle into serving bowls and top with crumbled bacon, shredded cheese, and green onions.
