The best thing about this recipe is that it's so versatile. You can add or remove ingredients to suit your own taste. For example, if you don't like spicy food, you can omit the cayenne pepper. Or, if you want to make it a vegetarian chili, you can simply leave out the chicken. This recipe is has only chillis and no tomatos in it .

Step-by-step

    1. Heat oil in a large saucepan over medium-high heat.
    2. Cook chicken and onion in oil 4 to 5 minutes, or until onion is tender.
    3. Stir in the chicken broth, green chiles, garlic powder, cumin, oregano, cilantro, and cayenne pepper. Reduce heat, and simmer for 15 minutes.
    4. Stir in the beans, and simmer for 5 more minutes, or until chicken is no longer pink and juices run clear.
    5. Garnish with green onion and shredded cheese.
