Cheesy Bacon BBQ Chicken: A Weeknight Winner

As a busy working mom, finding time to cook a delicious and satisfying dinner can feel like a Herculean task. Between school pick-ups, after-school activities, and the never-ending to-do list, the thought of spending hours in the kitchen often feels overwhelming. That’s why I’m always on the lookout for quick, easy, and flavorful recipes that the whole family will enjoy. This Cheesy Bacon BBQ Chicken recipe is a perfect example – it's ready in under 30 minutes and is packed with flavor! The combination of smoky bacon, tangy BBQ sauce, and melty cheese is simply irresistible. It’s a crowd-pleaser, guaranteed to bring smiles to everyone's faces.

The best part about this recipe is its versatility. You can easily adjust the ingredients to suit your preferences. Feeling adventurous? Try adding different types of cheese, such as pepper jack or Monterey Jack. Want to make it spicier? Add a dash of your favorite hot sauce to the BBQ sauce. The possibilities are endless! This recipe is incredibly forgiving, so don't hesitate to experiment and make it your own. I often use whatever cheese I have on hand – sometimes it’s a sharp cheddar, other times a milder Colby Jack. It always turns out great!

One of the things I love most about this recipe is how easy it is to clean up. Using parchment paper makes cleanup a breeze; simply discard the used paper after cooking. This means less time spent scrubbing and more time spent enjoying a delicious meal with my family. It's a small detail, but it makes a big difference when you’re already juggling a million things. Plus, the entire meal is baked on a single baking sheet, minimizing dishes.

Beyond its ease and deliciousness, this recipe offers a healthy and balanced meal. The chicken provides lean protein, crucial for energy and muscle building. The veggies (if you add any, I sometimes add roasted broccoli or asparagus) add essential vitamins and fiber. And while the bacon and cheese might seem indulgent, they add a satisfying richness that balances the overall nutrition profile. This recipe is a perfect example of how you can indulge in delicious flavors without sacrificing your health goals.

Tips and Tricks for Success:

  • Bacon Choice: I prefer center-cut bacon for its even cooking and crispiness. However, any type will work.
  • BBQ Sauce Selection: Opt for a BBQ sauce that's lower in sugar and carbs if you're watching your intake.
  • Cheese Variety: Experiment with different types of cheese to find your favorite flavor combination.
  • Don't Overcook: Overcooked chicken will be dry. Make sure to check for doneness using a meat thermometer.
  • Prep Ahead: You can prep the bacon and chop the veggies ahead of time to save time on busy weeknights.

This Cheesy Bacon BBQ Chicken recipe isn’t just a meal; it’s a testament to the fact that delicious and healthy eating doesn't have to be complicated. It's a quick, easy, and flavorful solution for busy weeknights, allowing you to savor a satisfying dinner without sacrificing precious time or energy. So, give it a try and let me know what you think! I’m confident it will become a new family favorite.

Step-by-step

    • Cook bacon to crisp according to package instructions (I bake mine at 400 for 15-16 minutes on a baking sheet, which leaves the oven pre-heated for the next step!).
    • Crumble the bacon into small pieces and set aside.
    • Pre-heat the oven to 400.
    • Line a baking sheet with parchment paper and set aside.
    • Use a pastry brush to brush the outsides of both sides of the chicken breasts with the olive oil and place them on the prepared baking sheet.
    • Sprinkle lightly with salt and pepper and place in the oven.
    • Bake for 15 minutes.
    • Remove from the oven and flip each breast over.
    • Split the barbecue sauce equally into two small dishes.
    • Using the pastry brush again (wash it in between!), paint the chicken breasts using half of one dish of the barbecue sauce.
    • Flip the breasts back over and paint the top side with the remaining barbecue sauce from that dish.
    • Place back in the oven for another 5 minutes.
    • Wash the brush thoroughly again before step three.
    • Remove the baking sheet from the oven and lift the parchment paper holding the breasts off of the sheet and set aside.
    • Re-line the sheet with aluminum foil or more parchment and transfer the chicken breasts back onto the freshly lined pan.
    • Discard the parchment paper holding any remaining oil/liquid.
    • You may want to check now to make sure the chicken is cooked through (or almost).
    • Use the remaining dish of barbecue sauce to slather the tops of each chicken breast one last time.
    • Sprinkle the cheese over top of each breast and follow with the bacon pieces.
    • Place back into the oven and bake for another 3-5 minutes until cheese is melted.
