The beauty of this recipe is its simplicity. No complicated techniques, no specialized equipment – just readily available ingredients and a little bit of love. The hand-pie format is incredibly charming; these little pastries are adorable, portable, and perfect for enjoying on the go. I often pack a couple in my lunch bag for a delightful afternoon treat, or sneak one into my child's lunchbox for a special surprise.

The flaky crust, bursting with warm cinnamon apples, is unbelievably satisfying. The vanilla glaze adds a touch of sweetness and elegance, elevating this simple dessert to something truly special. My kids love them, and truthfully, so do I. They're the perfect answer to those moments when you want something delicious and satisfying without the fuss.

The ease of preparation is a lifesaver. I can often whip up a batch of these hand pies on a Sunday evening while catching up on my favorite show. The preparation is mostly simple assembly, and the baking time is relatively short, leaving me with enough time to relax and recharge after a busy week.

Beyond the ease of making them, the versatility is a plus. I've experimented with different fillings – blueberry, cherry, even a savory spinach and feta – and they all turned out wonderfully. The fundamental recipe remains the same, offering a canvas for my creativity and adapting to whatever ingredients I have on hand. The ability to make different variations keeps things fresh and exciting, avoiding monotony in my baking routine.

These hand pies are more than just a treat; they are a symbol of my commitment to making quality time, even with a busy schedule. The act of baking, even a simple recipe like this, feels grounding and therapeutic. And sharing these homemade delights with my family is priceless. It's a small gesture that says, "I care about you, and I made this especially for you." In a world of fast food and convenience, these little hand pies represent a connection to simpler times and the satisfaction of creating something delicious from scratch. The secret to a perfect hand pie lies in the balance of flavors and textures. The tartness of the apples is perfectly complemented by the sweetness of the glaze and the warmth of the cinnamon. The crisp, flaky crust provides a delightful contrast to the soft, juicy filling. It's the kind of harmonious blend that leaves you wanting more. And the hand-held convenience means less mess and more enjoyment.

Step-by-step

    • Preheat oven to 400°.
    • Pour the apple pie filling out onto a plate and cut each apple slice into small chunks.
    • Follow the directions on the pie crust mix (each brand is a little bit different).
    • Roll the pie crust out until thin, about 1/4 inch.
    • Use a cookie cutter to cut out round circles. I used a 4 inch circle cookie cutter.
    • Spoon a small amount of the pie filling into the middle of each circle.
    • Carefully, fold the circle pie crust in half, use a fork to crimp the edges.
    • Cut two slits in the top of the pie crust to allow steam to escape.
    • Repeat with remaining circle pie crusts.
    • Gather up the pie crust scraps and repeat.
    • When all of the hand pies have been made, bake at 400° for 15-20 minutes, or until golden brown.
    • Wait a few minutes before covering with glaze.
    • For the Glaze: Mix the butter, powdered sugar, milk and vanilla together until smooth using a hand mixer or stand mixer.
    • Dip and roll the hand pies in the glaze, sprinkle with cinnamon and sugar if desired.
    • Let cool before serving.
