Billionaires Shortbread
Billionaires Shortbread
This is my incredibly decadent version of Billionaires (or Millionaires) Shortbread. What I mean by decadent is that the caramel is thicker than the shortbread Awesome That's why this recipe can make 16 servings because you don't need much to feel totally over-indulged

My Decadent Billionaire's Shortbread

Let me tell you, friends, this isn't your average shortbread. Oh no, this is the decadent version. The kind that leaves you utterly satisfied with just a single bite, so rich and luxurious it’s almost sinful. I call it "Billionaire's Shortbread," and it’s earned that name with its layers of perfectly crumbly shortbread, a thick, luscious caramel, and a generous topping of rich chocolate. I've tweaked the classic recipe to ensure the caramel is the star of the show, a thick and gooey layer that surpasses the shortbread base in sheer deliciousness. This isn't just a dessert; it's an experience.

The secret, you ask? It's all in the balance. The shortbread is buttery and delicate, providing a wonderful contrast to the intensely sweet caramel. And the chocolate? Well, it’s the perfect final flourish, adding another layer of indulgence. The recipe is surprisingly straightforward, requiring minimal equipment and readily available ingredients. It’s perfect for a special occasion, a cozy evening in, or even just a little treat to brighten your day. Trust me, this shortbread isn't just for billionaires; it's for anyone who appreciates a truly exceptional dessert. The recipe makes 16 servings, but let's be honest, one piece is usually enough to satisfy that intense craving for something sweet.

I find the most rewarding aspect of baking is sharing my creations. Whether it's a simple cookie or an elaborate cake, the act of bringing joy to others through my culinary endeavors fills me with immense satisfaction. This Billionaire's Shortbread is a testament to that belief, a recipe born from a desire to create something truly special, something that would bring a smile to the faces of my loved ones. And you know what? It does. Every time. The look on their faces when they take that first bite, the murmurs of delight, the happy sighs… those are the moments that make all the effort worthwhile. It's more than just baking; it's about connection, sharing, and making memories.

This recipe has become a staple in my home, a beloved classic that's requested time and again. It's versatile too; I've experimented with different types of chocolate, adding nuts or even a sprinkle of sea salt to enhance the flavors. The possibilities are endless! So, gather your ingredients, put on your apron, and prepare to indulge in a piece of pure heaven. You won’t be disappointed. This recipe is a testament to the simple joys of baking and the power of sharing delicious treats with those you care about. It’s a recipe for happiness, one decadent bite at a time.

But more than just a recipe, it's a reflection of my life – the balance of sweetness and simplicity, the occasional extravagance, and the constant joy of creating and sharing.

So, go ahead. Make this. Share it. Enjoy it. And maybe, just maybe, you'll feel a little bit like a billionaire yourself.

Step-by-step

    • Lightly grease an 8" round cake tin (one with a removable bottom is needed or you won't get your finished shortbread out!) and pre-heat your oven to 180C (for fan assisted, adjust accordingly).
    • In a bowl, cream the butter until soft, then add the caster sugar and beat until pale and fluffy.
    • Stir in the plain flour & rice flour, until the mixture binds together. Then, knead well to form a smooth dough. NOTE: The Rice flour helps give the shortbread a really nice crunch, if you can't get hold of any then just use plain flour instead.
    • On a lightly floured surface, roll out the dough into an 8" round and place it in the bottom of the cake tin pushing the dough upto the edges.
    • Prick the surface all over with a fork and bake in the oven for 25-30mins, until pale golden and just firm to the touch.
    • Take out and cool on a wire rack (Don't remove from the tin) and move onto to making the topping.
    • Place the butter and sugar onto a non-stick pan and stir over a medium heat until the butter has melted and the sugar dissolves.
    • Add the condensed milk, stirring continuously until the first bubbles appear on the surface. At this point remove from the heat and allow to cool slightly.
    • Pour the caramel over the shortbread and shake the tin to settle.
    • Leave on the side to cool fully. You can put in it the fridge to cool at this stage, but I find that you'll get condensation forming on top of the caramel.
    • Once cool, chop the chocolate bars into small squares and then sprinkle on top of the caramel and with a large flat blade pat down slightly to ensure the pieces are stuck.
    • Cover and chill in the fridge for 30-40 mins.
    • Remove from the cake tin and slice into 16 pieces.
    • Enjoy!
