Step-by-step

    • Heat a griddle or skillet over medium heat.
    • Combine oat flour, baking powder, cinnamon and dry stevia in a medium bowl and mix.
    • In a separate smaller bowl, combine cottage cheese, Greek yogurt, liquid egg whites and the flavor extract and mix.
    • Add the mixed wet ingredients to the bowl of dry ingredients and mix/fold with a spatula until evenly combined.
    • Spray nonstick spray on griddle and pour batter into 2 pancakes.
    • Cover pancakes with a glass lid to give them extra fluff as they steam.
    • When bubbles appear throughout the middle of the pancakes, flip and cover for another minute or two until cooked through.
    • Serve and devour.
