A Simple Yet Satisfying Chicken and Avocado Salad

As a busy working mom, finding time to cook healthy and delicious meals can be a real challenge. Weeknights are often a whirlwind of school pick-ups, homework help, and the never-ending to-do list. That's why I'm always on the lookout for recipes that are quick, easy, and most importantly, taste amazing. This Chicken and Avocado Salad with Lime and Cilantro perfectly fits the bill. It's a vibrant, refreshing salad that's packed with flavor and comes together in a matter of minutes.

The beauty of this recipe lies in its simplicity. No complicated techniques or hard-to-find ingredients are needed. I usually have most of these ingredients on hand already – cooked chicken (leftovers are perfect!), avocados, cilantro, and limes. The creamy avocado pairs beautifully with the juicy chicken and zesty lime dressing, creating a harmonious blend of textures and tastes. The cilantro adds a lovely fresh touch, balancing the richness of the avocado and chicken.

I often make a double batch on Sundays, knowing I'll have a quick and healthy lunch ready for the week. It’s fantastic for meal prepping! It also travels well, so it’s a perfect choice for packing lunches for work or school. Simply store it in an airtight container and enjoy it throughout the week. I've found that the flavors actually meld better after chilling for a while, enhancing the overall taste experience.

The versatility of this salad is another bonus. It can be enjoyed on its own, served in crisp lettuce cups for a low-carb option, or tucked into pita bread or sandwiches for a satisfying meal. I’ve even experimented with adding other ingredients, such as diced bell peppers, red onion, or black beans, depending on my mood and what I have available. The possibilities are endless!

What I love most about this recipe is that it’s both healthy and indulgent. The avocados provide healthy fats, the chicken offers lean protein, and the lime and cilantro add a burst of refreshing flavor. It’s a guilt-free pleasure that satisfies my cravings for something delicious without compromising my healthy eating goals.

Beyond its practicality and deliciousness, this salad has become a cherished part of my family's weeknight routine. My kids adore it, and it's become a regular feature on our dinner table. It's a testament to the fact that healthy eating doesn’t have to be boring or time-consuming. Sometimes, the simplest recipes are the most satisfying.

Tips and Variations:

  • Spice it up: Add a pinch of red pepper flakes to the dressing for a little kick.
  • Make it creamy: Use Greek yogurt instead of mayonnaise for a lighter and healthier version.
  • Add some crunch: Toss in some chopped nuts or seeds for added texture.
  • Get creative with the protein: Substitute the chicken with shrimp, grilled tofu, or chickpeas for a vegetarian option.
  • Prep ahead: Chop the vegetables and prepare the dressing ahead of time to save time during the week.

This Chicken and Avocado Salad with Lime and Cilantro is more than just a recipe; it's a solution to the everyday challenge of providing healthy and delicious meals for my family. It's a testament to the fact that simple can be extraordinary, and that even amidst the chaos of life, there’s always time for a flavorful and satisfying meal.

I highly recommend giving this recipe a try. It’s a true winner in my book, and I’m confident it will become a favorite in yours as well. Let me know in the comments how you enjoyed it, and feel free to share your own variations and creative additions! Happy cooking!

Step-by-step

    • Shred the chicken apart until you have 2 cups of chicken shredded into fairly large chunks.
    • Dice the avocados into medium-sized pieces, mix with 1 T of the lime juice, and season avocado with salt to taste.
    • Thinly slice the green onion and finely chop the cilantro.
    • Mix mayo and 1 T lime juice to make the dressing.
    • Put the chicken into a bowl large enough to hold all the salad ingredients.
    • Add the sliced green onions and dressing and toss until all the chicken is coated with dressing.
    • Add the avocado and any lime juice in the bottom of the bowl and gently combine with the chicken.
    • Then add the chopped cilantro and gently mix into the salad, just until it is barely combined.
    • Serve right away or chill for a while before serving. This could be served inside pita bread or sandwich bread, or inside crisp lettuce cups, but we just ate it as a salad. (I would imagine this would be fine in the fridge overnight but I didn’t have any left over when I made it!)
