Baked Fried Chicken: A Weeknight Winner

My Secret to Effortless, Delicious Baked Fried Chicken

As a busy working mom, finding time to cook a delicious and healthy dinner can feel like an impossible feat. Weeknights are a whirlwind of school pick-ups, homework battles, and the ever-present struggle to get dinner on the table before everyone collapses from exhaustion. That's why I'm so excited to share my go-to recipe: baked fried chicken. It's a game-changer, I tell you! Gone are the days of greasy splatters and hours spent frying. This recipe delivers all the crispy, flavorful goodness of fried chicken without the guilt or the mess.

I stumbled upon this recipe a while back – a Facebook post from a friend, if I recall correctly. It promised the taste of KFC without the deep frying, and honestly, it lives up to the hype. The secret? A perfectly balanced blend of spices and a clever baking technique that crisps the chicken to perfection. No slimy skin, just pure, unadulterated chicken flavor. This recipe is so easy, even my teenagers can help (mostly with the mixing!), freeing up my precious evening time for more important things, like finishing that mountain of laundry or actually having a conversation with my husband before we both fall asleep.

Why this recipe is a lifesaver:

  • Speed: It’s significantly faster than traditional frying.
  • Healthier: Baking instead of frying drastically reduces fat content.
  • Easy Clean-up: One pan, minimal mess, happy wife, happy life.
  • Kid-Friendly: Even picky eaters love this recipe.
  • Adaptable: This recipe works equally well with boneless, skinless thighs or breasts.

The best part? The flavor. The simple seasoning blend, a harmonious marriage of paprika, pepper, and a touch of seasoned salt, creates a crispy, flavorful crust that everyone will rave about. It's the kind of dish that feels both indulgent and healthy, a rare combination indeed. It's become a weekly staple in my house, and I know it's going to be a favorite in yours, too. So ditch the deep fryer and embrace the ease and deliciousness of this baked fried chicken – you won't regret it!

Tips for success:

  • Don't skip the milk soak: This step helps to tenderize the chicken and allows the seasoning to adhere better.
  • Ensure even coating: Make sure each piece of chicken is thoroughly coated in the spice mixture for optimal flavor and texture.
  • Watch the baking time: Every oven is different. Start checking for doneness around the 20-minute mark and adjust accordingly.
  • Serve it up: I love serving this with mashed potatoes, creamy coleslaw, or a simple green salad. The possibilities are endless!

This isn't just a chicken recipe; it's a testament to simple cooking that delivers exceptional results. It's a recipe born from the need for a quick, easy, and healthy meal that still tastes amazing. And that, my friends, is the magic of simple cooking. Give it a try, and let me know what you think!

Step-by-step

    • Place thawed chicken breast tenderloin strips in a bowl of milk. Let soak for 20-30 min.
    • Mix in a Gallon Size Ziploc or Large Bowl: 1/2 tsp. Salt 1 T Season All 3/4 tsp Pepper 1 c. Flour 2 tsp. Paprika
    • Preheat oven to 400 degrees.
    • Cut 1/2 stick of butter into a few pieces and place in a 9x13 pan.
    • Melt butter in pre-heated oven. Spread melted butter around the bottom of the pan. Lightly spray the pan, if needed, to make sure that there are no dry spots.
    • Shake excess milk off of chicken and completely coat each piece with the seasoning mix. You can either shake the chicken in the bag, until coated, or dip each piece in the bowl until coated. Place each piece of chicken in the pan.
    • Bake for 20 min. Turn each piece of chicken and continue baking for 20 more minutes, or until cooked through.
