My Go-To Picnic Treat: Banana Caramel Slice

As a busy mom, finding time to bake elaborate desserts is a luxury I rarely afford myself. However, that doesn't mean I compromise on delicious treats for my family and our adventures. This Banana Caramel Slice recipe is my absolute go-to for picnics, school events, and even just a quick after-school snack. It's incredibly easy to make, requires minimal ingredients, and tastes absolutely divine – a perfect blend of sweet, gooey caramel and rich chocolate, all underpinned by the comforting flavour of banana bread.

The best part? It's a sneaky shortcut! I use pre-made banana bread slices, saving me the time and effort of baking from scratch. This allows me to focus on other things, like packing the picnic basket or helping with homework. The assembly is quick and straightforward, making it a recipe that even the least confident baker can master. The result? A show-stopping dessert that always impresses, even if it comes together with surprising ease. I’ve received countless compliments on this slice, and it’s become a firm family favourite. The kids adore it, and even my husband, who usually prefers more traditional desserts, can't get enough.

This Banana Caramel Slice isn't just a crowd-pleaser; it's adaptable too. Feel free to experiment with different types of chocolate – milk chocolate would add a softer sweetness, while white chocolate would offer a delightful contrast. If you're feeling adventurous, try adding nuts or dried fruit to the caramel layer for extra texture and flavour. The recipe provides a wonderfully comforting and familiar taste, perfect for sharing, especially at occasions where a simple, yet impressive, dessert is required.

One thing I really appreciate about this recipe is how well it travels. The slice holds its shape beautifully, making it ideal for transporting to picnics, parties, or school events. I often cut it into bite-sized pieces to make it even easier to handle and serve. The rich caramel and chocolate coating keeps the banana bread moist and delicious, even after a few hours.

Beyond the ease of preparation and impressive results, I value this recipe because of the joy it brings. It’s become more than just a dessert; it’s a symbol of creating memories with my family. The anticipation of sharing this delicious slice, whether it's at a sunny picnic in the park or a cozy gathering at home, adds a layer of warmth and togetherness to our moments.

So, if you're looking for a foolproof dessert that's both delicious and easy to make, look no further. Give this Banana Caramel Slice a try – I promise you won't be disappointed. It's a recipe that I'll continue to cherish, not only for its taste but for the happy memories it creates.

  • 1/2 cup golden syrup
  • 395g can condensed milk
  • 180g butter
  • 100g dark chocolate chopped

Step-by-step

    • Grease a 20 x 30cm (base measurement) slice pan and line the base and sides with baking paper.

    • Set aside to cool completely.
    • Place the chocolate and remaining butter in a heatproof bowl.
    • Microwave on High for 45 seconds to 1 minute or until melted and smooth.
    • Spread evenly over the caramel.
    • Place in the fridge for 15-20 minutes to set.
    • Remove from the pan and cut into pieces.
