Raspberry Peanut Butter Freezer Bites: A Busy Mom's Sweet Treat

Life as a mom is a whirlwind. Between school runs, work deadlines, and keeping the little ones entertained, finding time for myself, let alone whipping up elaborate desserts, feels like a luxury. But lately, I've discovered a simple joy: these Raspberry Peanut Butter Freezer Bites. They're quick, easy, and surprisingly delicious, making them the perfect guilt-free indulgence for a busy mom like me.

The best part? They're made with ingredients I usually have on hand. No fancy trips to specialty stores, no complicated techniques, just a blend of wholesome goodness that's ready in a flash. I love how versatile this recipe is; you can easily adjust the sweetness and add other fruits or nuts depending on what’s in season. Sometimes I throw in a handful of chopped pecans for extra crunch or swap the raspberries for blueberries. The possibilities are endless!

The preparation is remarkably straightforward. I chop up the apples while the kids are busy with their drawing, then toss everything into the blender. A few minutes later, the mixture is ready. Pouring it into a lined baking tin and popping it in the freezer is another simple step. While it sets, I can tackle a few more chores around the house, making this recipe truly efficient. The result is a tray of delightful freezer bites, perfectly portioned for a sweet snack or a healthy dessert.

These freezer bites aren't just a time-saver; they're also a great way to get the kids involved in the kitchen. My little ones love to help measure ingredients and press the mixture into the tin. It’s a fun activity that teaches them about healthy eating habits and the satisfaction of creating something delicious from scratch. The act of making these simple bites together becomes a cherished family moment amidst the chaos of everyday life.

Beyond their convenience, these Raspberry Peanut Butter Freezer Bites boast a surprisingly balanced flavor profile. The sweetness of the dates and raspberries harmonizes perfectly with the nutty richness of the peanut butter and the subtle sweetness of apples. The chilled texture is a delightful contrast, offering a refreshing treat, especially on a warm day.

This recipe has become my secret weapon for managing those moments when a sugary craving hits, offering a healthier alternative to store-bought sweets. The freezer bites are individually portioned, making them perfect for packing in lunchboxes or taking on the go. No more worrying about messy or sugary snacks, just a healthy and convenient option ready to satisfy those sweet cravings.

So, if you're a busy mom looking for a quick, easy, and healthy dessert option, look no further. These Raspberry Peanut Butter Freezer Bites are a game-changer. They're the perfect blend of convenience, taste, and nourishment, a welcome addition to any busy household.

Ingredients

2 tbsp melted coconut oil

2 medium apples cored, peeled, and chopped into small chunks (alternatively you can use 175g of applesauce)

30 g dates

125 g (1/2 cup) peanut butter

70 g (3/4 cup) raspberries (frozen)

Step-by-step

    • Add chopped apples to a pan along with 4-5 tbsp of water.

    • Enjoy straight from the freezer.
