A Weeknight Winner: My Go-To Chicken Pesto Parmesan Pasta Skillet

As a busy working mom, finding time to cook a delicious and healthy dinner can feel like a Herculean task. Many nights, I crave a comforting, flavorful meal that doesn't require hours in the kitchen. That's where my Chicken Pesto Parmesan Pasta Skillet comes in – a true weeknight warrior that always delivers. This one-pan wonder is not only quick and easy but also incredibly satisfying. The creamy pesto sauce, tender chicken, and perfectly cooked pasta create a symphony of flavors that the whole family will adore. Forget takeout; this recipe is my secret weapon against dinnertime stress.

The beauty of this dish lies in its simplicity. I start by toasting pine nuts for a deeper, richer flavor. Then, I whiz up a quick pesto using fresh basil, garlic, and lemon juice – a vibrant burst of freshness that complements the creamy parmesan. While the pesto simmers, I add the pasta, vegetables, and chicken to the skillet, creating a harmonious blend of textures and tastes. The secret to perfectly cooked pasta? Adding just enough water and milk to create a steamy environment that cooks the pasta beautifully. No need for a separate pot of boiling water!

This recipe is incredibly versatile. Feel free to experiment with different vegetables. I often add bell peppers, mushrooms, or spinach for extra color and nutrition. You can also customize the protein; shrimp or sausage would be a delicious substitution for the chicken. The key is to keep it balanced – a combination of vibrant greens, hearty protein, and the irresistible creamy pesto sauce. The final touch? A generous sprinkle of parmesan cheese – because who can resist a good cheesy pasta dish?

Beyond its ease and deliciousness, this Chicken Pesto Parmesan Pasta Skillet speaks to something deeper for me: the joy of creating a simple, heartwarming meal for my loved ones. It's a dish that embodies my belief in using fresh, high-quality ingredients to make nourishing food without sacrificing time or convenience. The best part? The cleanup is minimal. One pan, one happy mama. That's the kind of recipe I need – and I bet you do too.

So, whether you're a seasoned cook or a kitchen novice, give this Chicken Pesto Parmesan Pasta Skillet a try. It's a recipe that's as easy as it is delicious – a weeknight lifesaver and a family favorite all rolled into one. And if you're looking for a quick and satisfying dinner that doesn't compromise on flavor, look no further. Your tastebuds (and your family) will thank you.

Tips for Success:

  • Don't overcook the pasta: Follow the instructions carefully to ensure the pasta is cooked through but still has a slight bite.
  • Use fresh basil: Fresh basil adds a brightness and flavor that you won't get from dried basil.
  • Adjust the seasoning to your taste: Add more salt, pepper, or garlic to suit your preferences.
  • Get creative with vegetables: Experiment with different vegetables to create your own unique version.
  • Make it a complete meal: Add a side salad or some crusty bread to make it a satisfying and complete dinner.

This Chicken Pesto Parmesan Pasta Skillet is more than just a recipe; it's a testament to the power of simple ingredients, clever cooking techniques, and the satisfaction of creating a delicious, healthy, and heartwarming meal for those you love.

Step-by-step

    • Place the pine nuts in a large saute pan or deep skillet and bring over medium heat. Cook for a few minutes, stirring occasionally until pine nuts start to look golden/toasted. Remove the pine nuts from heat.
    • Combine 2 tablespoons of the toasted pine nuts (reserve one for topping) with the basil, garlic and lemon juice in the bowl of a food processor and grind it until a pesto paste forms and everything is finely minced and combined. Set aside.
    • Place the dry pasta in the same large saute pan or deep skillet from step one and pour in the water and milk. Stir in the salt and top with the broccoli, zucchini and peas. Turn the heat on to medium and stay by the stove, stirring occasionally and watching closely for the contents to begin to simmer. *Pan should remain uncovered. Make sure you don’t wander away, you do not want the contents to boil and spill over or for the milk to get overheated and separate*
    • When you see the liquid start to simmer, reduce the heat to low. Cook the mixture on low, stirring every couple minutes, for 13-16 minutes until the liquid is mostly absorbed (pasta and veggies will be cooked).
    • Add the cooked chicken pieces and the pesto from step two and stir in until well combined. Cook for another 1-2 minutes.
    • Remove from heat and stir in almost all of the shredded Parmesan (I like to reserve a tiny pile for topping).
    • Cover the pan with a lid for 2-3 minutes until the cheese is melted and then stir until well combined and cheesy.
    • Top each serving with a sprinkle of the reserved Parmesan and ½ teaspoon of the reserved pine nuts.
