Better Stove Top Mac and Cheese: A Weeknight Winner

As a busy working mom, time is my most precious commodity. Dinner needs to be quick, easy, and (let's be honest) delicious enough to satisfy my picky eaters. That's where this Better Stove Top Mac and Cheese recipe comes in. It's a game-changer, elevating the humble boxed mac and cheese to a whole new level of creamy, cheesy goodness without sacrificing precious minutes of my already jam-packed schedule.

Forget spending hours slaving over a stovetop – this recipe utilizes the convenience of boxed mac and cheese as a base, then jazzes it up with a few simple additions. The result? A comforting, satisfying meal that tastes like it took forever to make, but actually comes together in under 30 minutes. Seriously. My kids devour this, and even my husband, a self-proclaimed mac and cheese connoisseur, raves about it.

The Secret to Elevated Mac and Cheese: The key to this recipe lies in the simple enhancements. A touch of adobo seasoning in the cooking water infuses the pasta with a subtle savory depth, while the extra shredded cheese and a splash of milk in the cheese sauce create a luxuriously smooth and creamy texture. This takes the standard boxed mac and cheese from "okay" to "oh my gosh, this is amazing!" It’s a simple upgrade, perfect for busy weeknights when you still want to feel like you're providing something special and comforting for your family.

Beyond the Basics: Customization is Key One of the things I love most about this recipe is its versatility. The shredded cheese is completely customizable. I often use a fiesta blend for a touch of zesty flavor, but cheddar, Monterey Jack, or even a blend of different cheeses all work wonders. Feel free to experiment and find your favorite combination. You can also add in cooked vegetables like broccoli or peas for a more nutritious meal, or even a sprinkle of bacon bits for extra indulgence. This recipe is as adaptable as you are. And this makes this dish so versatile and perfect for busy weeknights.

More Than Just a Meal: A Moment of Connection Beyond the ease and deliciousness, this mac and cheese recipe represents something more. In the whirlwind of daily life, it's a small, simple moment of connection with my family. The aroma of the cheese sauce simmering on the stove evokes feelings of warmth and comfort, creating a sense of togetherness around the dinner table. It's a reminder that even amidst the chaos, there's always time for a delicious, heartwarming meal shared with loved ones. These are the moments I treasure, and this recipe helps make them happen.

From Box to Bliss: A Simple Recipe for Happy Tummies This isn’t just a recipe; it's a shortcut to happiness. It’s a testament to the fact that delicious meals don't always require hours of preparation. This stovetop mac and cheese is a testament to efficient cooking and delicious results, making it a perfect solution for busy weeknights or anyone wanting a quick, easy, and incredibly satisfying meal. So, the next time you're short on time but craving comfort food, give this recipe a try. You won't be disappointed.

Ingredients You'll Need:

  • 1/4 cup milk
  • 2 boxes of boxed mac and cheese (including all ingredients within the boxes)
  • 1 cup shredded cheese (any kind you like – I prefer a fiesta blend without added spices)

Pro Tip: Using a slow cooker keeps the mac and cheese warm and ready to serve for hours. Perfect for parties or if you want dinner ready and waiting when everyone gets home.

Beyond the Recipe: Embracing Imperfection in the Kitchen As a working mom, I've learned to embrace the imperfections of life and cooking. Not every meal is going to be picture-perfect, and that's okay. What truly matters is the time spent together, the laughter shared, and the love that goes into creating a meal, however simple it might be. This mac and cheese is a reflection of that sentiment; simple, yet deeply satisfying.

So, go ahead and try this Better Stove Top Mac and Cheese recipe. It’s a simple way to elevate a classic, saving time and creating delicious memories along the way. Happy cooking!

Step-by-step

    • Put water in the pot maybe 1½" from the top of the pot (not the top of the strainer) and add four or so shakes of Goya Adobo All Purpose Seasoning with Pepper and bring the water to a boil.
    • Open two boxes of Mac and Cheese. Put the pasta in the boiling water and cook the pasta for the amount of time indicated on the box.
    • While the pasta is cooking make the cheese sauce. The box will indicate how much milk and butter to use. Put this in a pan with the powdered cheese and heat over medium-low to medium heat. Stir frequently. You want to heat it to the point the butter is melted and it's fully combined.
    • At that point remove it from the heat and add 1 cup of shredded cheese and ½ cup of milk and mix together and set aside for now.
    • Once the pasta is done pull the strainer out of the water to drain the pasta and once drained pour the pasta into your slow cooker.
    • Pour the cheese sauce over the pasta and mix.
    • If you need to make another batch of two boxes just repeat what you've already done. Remember to put the slow cooker on warm. You can do that a little in advance if you want to get it warm awhile.
