A Home Baker's Delight: Alfajores, a Taste of Chile

The aroma of warm, buttery cookies, infused with a hint of orange and spice, fills my kitchen. It's a familiar scent, one that instantly transports me back to sunny afternoons spent baking with my grandmother. Today, I'm sharing a recipe that's close to my heart: Alfajores, the delightful Chilean sandwich cookies. These aren't just cookies; they're a taste of tradition, a comforting indulgence, and a perfect treat to share with loved ones.

Alfajores are incredibly versatile. The basic recipe is simple, yet the possibilities for customization are endless. The sweet, creamy dulce de leche filling is a classic, but you can easily substitute it with your favorite jam, chocolate spread, or even a tangy lemon curd for a more unique twist. The cookies themselves are delicate and melt-in-your-mouth, the perfect foil for the richer filling. The subtle spice notes from the cinnamon, cloves, and nutmeg add a warm complexity, enhancing the overall flavor profile.

Baking these Alfajores is more than just following a recipe; it's about embracing the process. The rhythmic mixing, the satisfying scoop of dough onto the baking sheet, the anticipation as they bake to golden perfection – each step is a small act of love, a way of creating something special. The final touch, dusting the finished Alfajores with powdered sugar, adds a delicate elegance, a finishing flourish that elevates these simple cookies to something truly extraordinary.

The beauty of Alfajores lies not just in their taste, but in their ability to connect people. They’re perfect for sharing with friends and family, a sweet gesture that brings smiles and happy memories. Remember that this is a recipe that allows for a touch of your own personal flair. Feel free to experiment with different fillings, perhaps adding a sprinkle of sea salt to the dulce de leche for an unexpected salty-sweet contrast, or incorporating some chopped nuts into the cookie dough for added texture. The possibilities are as vast as your imagination.

This recipe, passed down through generations, is more than just a set of instructions; it's a story, a legacy, a taste of home. So gather your ingredients, preheat your oven, and prepare to embark on a baking journey that will transport you to the heart of Chile, one delicious Alfajor at a time.

Step-by-step

    • Preheat the oven to 350°F (175°C).
    • Prep two cookie sheets with parchment paper or spray with Pam.
    • Put the sugar and butter in a large mixing bowl and mix on medium for two minutes, until fluffy.
    • While the sugar and butter are mixing, measure the flour, baking powder and salt in a bowl and set aside.
    • Add the eggs to the butter and sugar one at a time and mix until well combined.
    • Alternate adding a bit of the flour mixture with the liquids - the milk, orange juice, and vanilla. Make sure to use a spatula to scrape the sides and bottom to ensure you are mixing it all in. Mix for a full 2 minutes. The dough will seem a little runny and that is how it's supposed to be.
    • Using a 1 1/2 inch cookie scoop, scoop the cookies onto the cookie sheet (I do 5 across, 3 up and down).
    • Put in the oven and bake 12-14 minutes. While that is baking, scoop cookies onto the other sheet.
    • Open the dulce de leche cans and add to a small bowl. Mix in the cinnamon, cloves, and nutmeg if you desire. We love them with and without, so it is really your preference.
    • Once the cookies have baked, remove from oven and allow the cookies to sit on the cookie sheet for about 5 minutes before moving them to cooling racks. Add more dough and alternate baking through on the two cookie sheets until you have baked all the dough, about 4-5 times. It will seem like a lot of cookies, but you have to remember you need two cookies per Alfajor.
    • Once they have cooled, spread a good amount of dulce de leche or jam, whichever you prefer, over the bottom of one cookie.
    • Add another cookie to the top to complete the sandwich.
    • Lay on the cookie sheet or a plate and put a small amount of powdered sugar in a mesh strainer and lightly tap with your hand to dust the top of the cookies.
    • Enjoy!
