My Unexpected Caramel Cashew Chocolate Fudge Adventure

As a busy mom of three, finding time for anything beyond the daily grind feels like a luxury. Between school runs, soccer practice, and the never-ending cycle of laundry, the idea of indulging in a decadent dessert often takes a back seat. However, a recent family gathering changed all that. My aunt, a renowned baker, shared her Caramel Cashew Chocolate Fudge recipe, promising a treat that would be both easy to make and irresistibly delicious. Intrigued, and armed with a desperate need for a little "me time," I decided to give it a shot.

The recipe itself was surprisingly straightforward. The initial steps involved melting chocolate and butter, a task that even my youngest could assist with (under close supervision, of course!). Then came the sugar and evaporated milk mixture, which required a bit more attention, a gentle dance around the stovetop to ensure even boiling. But the most rewarding part was the final assembly – the rich, chocolatey base, the luscious caramel topping, and the satisfying crunch of the cashews. It was a sensory symphony! The aroma alone was enough to transport me to a world far removed from overflowing laundry baskets and overdue bills.

This wasn't just another dessert; it was a culinary adventure that unfolded in my own kitchen. It was a testament to the transformative power of simple ingredients, thoughtfully combined. The process itself became a form of mindful meditation, a welcome break from the whirlwind of daily life. The rich, velvety texture of the fudge, combined with the salty-sweetness of the caramel and cashews, created a flavour profile that was both sophisticated and comforting. It was the perfect end to a hectic day, a moment of pure indulgence that felt richly deserved. Sharing this fudge with my family intensified the experience; their smiles and satisfied sighs were the ultimate reward.

Step-by-step

    • Line a 9x13 inch pan with aluminum foil or parchment paper and lightly spray with nonstick spray.
    • Place 1 cup butter and chocolate chips in a large bowl. Set aside.
    • In a large saucepan combine sugar and evaporated milk. Bring to a boil over medium high heat stirring constantly for 10 minutes.
    • Pour the sugar mixture over the chocolate chips and butter.
    • Using an electric mixer beat the mixture for 3 minutes.
    • Mix in the vanilla.
    • Spread the chocolate into your 9x13 inch pan.
    • Allow to completely cool before frosting.
    • To make the caramel cashew topping: In a microwave safe bowl, melt caramel and heavy cream 30 seconds at a time stirring until melted and smooth.
    • Pour and spread evenly on top of the fudge.
    • Top evenly with cashews and gently press into the caramel.
    • Let completely cool. I liked to pop mine into the fridge for a bit right before cutting.
