Step-by-step

    • In a food processor, blitz the carrot, onions, and celery with the chili.
    • Add skinned sausage and pulse until thoroughly mixed.
    • Add fennel and oregano and pulse again.
    • Put the mixture into a hot frying pan with some olive oil and fry, breaking the mixture up as you go.
    • Meanwhile, boil some salted water for your pasta.
    • When the mixture is gently browned, add the balsamic vinegar and garlic. Cook until the vinegar is absorbed, then add the tomatoes and let the mixture simmer down.
    • This is where I leave things a bit longer if I have added two tins of tomatoes.
    • When your sauce is ten minutes from perfection, cook your pasta.
    • Stir basil through when ready to serve, stir drained pasta through the sauce, and serve with lots of fresh Parmesan.
