The beauty of this dish lies in its simplicity. There's something inherently comforting about a dish that comes together quickly, using ingredients that are readily available. Yet, the result is far from ordinary. The crispy bacon adds a delightful salty crunch, the garlic and parsley provide a subtle herbaceousness, and the parmesan cheese, oh that parmesan cheese! Its rich, nutty flavor ties everything together beautifully. The key is to get the balance just right, making sure that each ingredient shines without overpowering the others.

It’s a reminder that even the simplest of meals can be extraordinary when made with love and attention to detail.

I often find myself making this dish on a Sunday night, a nod to those cherished memories of family dinners. It's my way of keeping the tradition alive, of sharing a little piece of my past with those I love. Beyond the Recipe:

This recipe is easily adaptable. Feel free to experiment with different types of cheese, add some sauteed mushrooms or spinach for extra flavor and nutrients, or use a different type of pasta. The possibilities are endless!

The beauty of cooking is in its adaptability. Don't be afraid to put your own spin on things, to make the recipe your own. This Mini Carbonara is a starting point, a base upon which you can build your own culinary masterpiece. The most important ingredient, after all, is love – love for food, love for family, and love for the simple joys of life.

Step-by-step

    • Add water to pot and boil (add salt to water)
    • Chop bacon into small 1/2 in pieces and place in frying pan on medium heat
    • Add pasta to boiling water and cook for 8 minutes (or until desired texture)
    • Fry bacon until brown and crispy. Remove from pan onto paper towel and return pan to stove
    • There should be very little grease left in pan about 1/2 tsp at most, remove all excess. Add the garlic, butter, parsley, hot pepper; stir until butter has melted. Add 3/4 of the parmesan cheese and stir until well mixed. Add bacon bits, mix, and let sit on very very low heat.
    • Remove pasta to strainer then return to pan
    • Pour butter and garlic sauce over pasta and stir. Add egg(s) and mix well; eggs will lightly cook from the heat of the pasta as you stir.
    • Top with remaining parmesan cheese and parsley. If you like creamier, add 1/2 cup or more of heavy cream
