    • Heat oil in fry pan to low heat
    • Add tomatoes and cook until soft, then pop them
    • Add capsicum and cook until it just starts to soften
    • Add salt, pepper and basil then remove from heat
    • Inside tortilla place:
      • 50 grams pork
      • 1/4 of kumara
      • 1/4 of the tomato mix
      • 1 tablespoon cheese
      • optional chilli sauce or gherkin or both
    • Place tortilla in fry pan and fold in half
    • Flatten the bread using spatula and cook until brown
    • Flip over and cook until brown, then slice and serve
