A Busy Mom's Sweet Escape: Nutella S'mores Crepes

Life as a working mom is a whirlwind. Between juggling work deadlines, school pick-ups, and keeping the house somewhat tidy, there's rarely a moment to breathe, let alone indulge in a decadent dessert. But even the busiest of schedules deserve a little sweetness, a moment of pure, unadulterated deliciousness to recharge and reconnect with myself. That's where my Nutella S'mores Crepes come in – a simple yet incredibly satisfying treat that requires minimal effort but delivers maximum flavor.

The beauty of this recipe lies in its simplicity. It's not some elaborate, time-consuming project that requires specialized skills or obscure ingredients. No, these crepes are a testament to the magic of everyday ingredients, transformed into something extraordinary. The crepe batter itself comes together quickly, thanks to the magic of my trusty blender. A few simple ingredients—flour, milk, eggs, a touch of vanilla—and a few minutes of blending is all it takes to create a smooth, luscious batter. The delicate crepes cook up in minutes, each one a perfect, golden-brown canvas for the sweet symphony to follow.

Then comes the star of the show: the Nutella. Rich, decadent, and utterly irresistible, the hazelnut chocolate spread adds a layer of luxurious indulgence. And who can resist the gooey, toasted perfection of marshmallows? I roast mine in the oven for that perfectly caramelized exterior, creating a textural contrast that’s simply delightful. The final touch? A sprinkle of graham cracker crumbs, adding a delightful crunch to round out the experience. These are not just crepes; they’re tiny pockets of happiness, a comforting hug in edible form.

More than just a dessert: This recipe is a symbol of self-care. In the midst of my hectic routine, taking a few minutes to whip up these crepes becomes a mindful act. The gentle rhythm of blending, the soothing sizzle of the pan, the sweet aroma filling my kitchen—these small details become moments of calm, a pause in the chaos. It's a way to remind myself that I deserve a little pleasure, a little indulgence, even amidst the madness of motherhood.

And it's a perfect way to share joy. Whether it's a late-night treat for myself after the kids are asleep or a delightful surprise for my family, these crepes always bring a smile to everyone's face. The process of making them is as enjoyable as eating them, and the smiles on the faces of my loved ones are the best reward. The simple act of creating something delicious, something lovingly made, strengthens our family bonds and creates beautiful memories.

So, the next time you find yourself feeling overwhelmed by the demands of life, remember the magic of these Nutella S'mores Crepes. They're a reminder that even in the busiest of lives, there's always room for a little sweetness, a little joy, and a lot of love. They are a testament to the fact that sometimes, the simplest pleasures are the most rewarding. The recipe is easy to follow, the ingredients readily available, and the result? Pure, unadulterated happiness in every bite. Try them, and let me know how they bring a moment of sweetness into your day!

Beyond the recipe: This is more than just a recipe; it’s a philosophy. It’s about finding joy in the everyday, in the simple act of cooking and sharing. It’s about taking a moment for yourself, to pause, to breathe, and to appreciate the small things. It’s about creating memories, one delicious crepe at a time.

Step-by-step

    • Combine Crepe ingredients in a blender or bullet blender and blend until batter is smooth and free from lumps (about 2 minutes).
    • Scrape the sides down with a spatula and the inside of the base, and blend again for a further minute to ensure all flour has been blended.
    • Pour about ½ cup batter onto the centre of a nonstick pan lightly greased with butter, while swirling the pan to evenly cover the base and create a thin crepe.
    • When golden and crepe begins to pull away from the sides of the pan, flip (I use my fingers to flip them).
    • Remove when cooked through (about 1-2 minutes per side), and repeat with remaining batter.
    • Fill each crepe with Nutella and roasted marshmallows (see below) and fold over.
    • Top with graham cracker crumbs.
    • Cover a baking tray with parchment/baking paper, and place marshmallows on the tray in a single layer.
    • Place into a preheated oven with grill/broil settings on medium heat and oven shelf in the middle or upper part of the oven (not to close to the top of the oven, or they can burn).
    • Keep an eye of your marshmallows, and after about 2 minutes or when golden on top - melted and spread out, remove them and immediately spoon them onto your crepes.
